With the advent of summer and the first warm rains appear mushrooms. Therefore, at the height of summer, I would like to cook something delicious, it's time to prepare dishes from mushrooms.

In the beginning of summer, after a heavy rain, the rank-and-file growers grow well (they are meadow mushrooms of light brown color, grow in a row, so they are so nicknamed, they, perhaps, do not grow everywhere). In general, dishes from mushrooms, of course, to an amateur, because not everyone tolerates and not all like mushrooms. But from them you get very delicious culinary masterpieces. Here is one of them - potato zrazy with mushrooms.

Such dishes from mushrooms go at the table just "with a bang." For cooking, we need the following products: 1 kg of fresh potatoes (early varieties at this time are already ripening), about 500 grams of mushrooms (I use ryadoviki, you can have other mushrooms), 30 grams of butter, 1 large onion, 1 egg, garlic, greens , Salt, flour (for breading) and vegetable oil for frying.

This dish of mushrooms is prepared quickly. It is very tasty and elegant, so it can be cooked even for the holidays.

Onions and mushrooms finely shred and fry in vegetable oil, orienting on a bow - it should become golden. Do not forget to salt and pepper. Closer to the readiness to spread to the mushrooms chopped garlic. We clean potatoes and boil them. Then cook it with mashed potatoes with the addition of salt, pepper and butter. When the mashed potatoes cool down, add the beaten egg and flour, mix everything and form cakes. In the center of each of them we lay out a spoonful of mushroom filling, add the potato cake in half and form zrazy. They look like big burgers with stuffing. Then we roll the zrazy on both sides in flour and fry in vegetable oil until it is crusty. Finished zrazy sprinkle with herbs and abundantly watered with sour cream, served to the table. Out of this number of products I had 10 pieces. Here is an interesting dish made from mushrooms.

The same option can be prepared in a slightly different way. Mushrooms as fry, and boil potatoes. Then, on top of the hot potatoes, we spread the mushrooms with a slide, sprinkle with grated cheese, greens and serve. A very satisfying dish turns out, you can feed a large family. Very good to eat them with sour cream.

Not less tasty are cutlets with mushrooms and cheese. In order to cook them you need 500 grams of any minced meat, 300 grams of mushrooms (mushrooms can be bought in the shop in any season of the year), 2 large onions, a couple of slices of white bun, 1 egg, 100 grams of any hard cheese (I prefer " Mozzarella "), garlic 2 cloves, sour cream, salt and vegetable oil. Such dishes from minced meat and mushrooms can be served both with garnish and without it.

Onion and mushrooms finely chop, salt and fry until cooked in vegetable oil. For a couple of minutes until ready, add the crushed garlic. Mushrooms are ready. Now we prepare the minced meat for cutlets. Slice bun is soaked in milk, squeezed and mixed with minced meat. Next, add the beaten egg, salt the mass and mix. We form cutlets and bake in the oven. 5 minutes before the preparedness, we take out the baking sheet, lay out a spoonful of mushrooms on each one, sprinkle the grated cheese on top and send it back to the oven. We are waiting for the cheese to fuse a bit. Hot cutlets are served with sour cream and sprinkled with greens. As a side dish, you can serve mashed potatoes, rice or stewed vegetables.

By the way, you can prepare salads, various soups, pastries from mushrooms. In fact, there are many interesting recipes, just do not always have time to try each of them. My friend is fond of pancakes with mushroom filling and even cooks sushi with mushrooms. I myself, of course, did not try, but it sounds tempting, I plan to cook in the near future.
