From the very moment when the first people learned to cook primitive food, the culinary art never stood still. It developed, grew with our needs. And now, when there is no deficit in even the most exotic products, we can afford any unusual experiments. It's not surprising that new dishes are growing so fast and gaining popularity.
But, as you know, there are recipes, as they say, for all time. Those dishes that our grandmothers were preparing, but which for some reason do not get bored even after many years. On the contrary, they respond with pleasant nostalgic memories to this day. One of these dishes can be called an apple pie with cinnamon. What does it cost only an appetizing smell of this delicious baking!
Nobody will argue that apples and cinnamon make up an ideal aromatic and taste combination. It is not surprising that a pie with apples and cinnamon has become popular with many gourmets. After all, despite the relatively simple technique of cooking, it is able to give an autumn mood and a feeling of warmth and comfort. It is especially nice to offer it to guests with a cup of hot tea.
What you need for a pie
Probably, each family has its own, a special recipe for cooking this dish. Here the French variation will be presented. So, to make apple cake with cinnamon, for the dough you need to take 800 grams of flour, one tablespoon of sugar, 40 grams of margarine (or butter), 400 milliliters of milk, cinnamon, one bag of dry yeast (which is usually 10 grams), salt And separately another 100 grams of oil.
The filling will need about 350-400 grams. It is prepared from apples and sugar powder (you can take sugar). Apples need to be washed, peeled and peeled and grated on a large grater. You can also cut them into thin slices. The amount of sugar depends on how much the apples are acidic. Next, adding a little water and mixing everything with the sugar powder, we pasteurize it all for about 30 minutes. The plus of this method of preparation is that the resulting filling can be rolled into cans and stored until the moment it is needed.
Mix the dough
That our apple pie with cinnamon turned out magnificent, the flour should be sifted well. Further we fall asleep to it dry yeast. Separately mix milk with salt and sugar and pour everything into the dishes with flour. With the help of a whisk or a mixer (as practice shows, it's easier and more efficient the second one) mix the dough. It is important to add oil at the very end of the process. We put the dough in the refrigerator until it rises. When it comes up, we take it out and spread it on the table, we knead it from all sides.
Then roll the resulting mass into a thin layer (1 cm), grease the top with oil from the 100 grams that were left separately. After that, we need to roll the dough into a roll and remove it again in the cold, after wrapping the food film. Approximately in half an hour (it is possible longer) we repeat procedure: we take out a dough, we roll out a thin layer, we grease with oil, we turn off a roll, and - in a refrigerator. This procedure should be repeated three times.
We bake apple pie with cinnamon
Now you can get the finished dough from the refrigerator and let it warm to room temperature. After waiting a little, we separate the part of the test from the total mass and put aside the side. The rest is placed in a round baking dish. We spread the apple stuffing mixed with cinnamon to taste. From the remaining dough cut the stripes, beautifully placing them from the top crosswise. Cover the form with a towel and leave to go.
When it rises, be sure to lubricate the surface with beaten egg yolk and put in the oven for 40-45 minutes. Periodically you should check the readiness of the pie, piercing it with a toothpick. Bake at 200 degrees.
When the pie is ready, we sprinkle it with water, cover it with a towel and leave it for a while in peace, before serving it on the table.
