I remember from my childhood how my mother often cooked tasty pancakes for the whole family. What options she just did not invent: and pancakes with meat, and potatoes mushrooms, with cottage cheese and other fillings. Being an adult, now and I for my family sometimes cook this simple, but all my favorite dish. Today I will share one of my recipe, but first we'll go into history a little. After all, it is interesting to know where this dish came from, who prepared it and under what circumstances.

At present, it is believed that pancakes with or without meat minced began to be prepared in Belarus for the first time. Although today this simple dish is prepared in many countries of the former CIS and even in Israel, in other countries of the world it has acquired a different name - American Hash Brown. Let the names change, as they want, the way of preparation and the ingredients are not particularly different. The most used product remains, as before, potatoes. It is believed that potatoes were grown in Belarus for the first time, and therefore the pancakes appeared exactly there.

Draniki are some kind of potato pancakes, and they got the name from the word "tear", as the potato had to be finely chopped to obtain a homogeneous mass and the subsequent cooking process. In this case, there are even varieties of grated potatoes. There are potatoes (grated potatoes with the resulting juice), clinked (grated potatoes without juice) and boiled potatoes or mashed potatoes. For draniki, the first two types of grated potatoes are more often used, although you can take a third note. Especially it is convenient, if after a supper there was a potato, and to put it there is no place, except how to throw out. So you should not do this, cook pancakes with mashed-up meat for breakfast.

In essence, pancakes are a very nutritious and tasty dish, which can be served on the table without additional side dishes. You can prepare it both with the addition of various fillings, and without them. For example, you can make pancakes with meat, pancakes with cabbage, pancakes with mushrooms or the ingredients that each mistress decides to add herself. In this case, and the taste of these slightly different pancakes will also be different.

By the way, draniki with meat have the second name - "sorcerers". I wonder why they got such a funny name? Maybe because this simple dish should be conjured to get excellent potato pancakes, or because such a simple dish can bewitch, for example, a lover? Here you can only guess. But let's not think long, let's go on to the cooking process.

So, pancakes with meat, cooking recipe. It is necessary to take such products: potatoes - 2 kg, meat, or better immediately minced - 500 grams (I take mixed minced meat - pork plus beef), two onions, sunflower oil for frying up pancakes in a frying pan, flour - several tablespoons Look during the preparation, it can turn out so that it does not need), salt and a mixture of peppers. If you took meat, not mincemeat, then prepare it by twisting with onions through a meat grinder, then adding salt and a mixture of seasonings, mix well. Minced left aside, begin to clean and wash the potatoes. Now it should be rubbed on a fine grater. Yes, the process is time-consuming and long, but it's worth it. And if you have a miracle harvester, then the process of rubbing will take you a few minutes. The resulting juice from potatoes is better to merge, and do it with a spoon, removing the liquid from above, otherwise all the potato starch will leave. And he plays the most important role here. Now rub onion on a fine grater and immediately add it to the grated potatoes, until it has darkened, everything is well mixed. Do not forget to salt. Here we look, if a lot of liquid has formed, you can add flour.

And now the process of roasting. On a hot frying pan pour a tablespoon of dough, to form cakes. From above we put carefully minced meat. We are waiting for the pancakes to fry, and cover with another layer of potato paste. Gently invert and fry again until golden color is obtained. Next, add all the pancakes with meat on a baking sheet and send it to the oven for 15-20 minutes to prepare for the end of mincemeat.

The whole dish of potatoes and meat is ready, you can serve it along with sour cream or other favorite sauces. Bon Appetit!
