Ironically, on old cast-iron frying pans (and even not on cast-iron ones, but simply with a thick bottom), such whimsical products like pancakes always turn out better than on teflon, non-stick ones. So I saw how the old frying pan of a very small diameter (12 cm) was preserved by my parents in the pantry, I tried it - so now only on it and pancakes are baked - such beauty turns out and turns extremely easily, it's a pity that she alone, Because with the proper skill and on two you can easily work - just an impressive hill neat pancakes can quickly bake. But the main thing, of course, is not the diameter of the frying pan, but how to make such a kneading dough to make delicious pancakes on milk.

So, I want to share my experience, tell you how to make pancakes with milk, and I get it, I did not immediately, but the nuances were taken into account from time to time and I began to work out those pancakes on milk! And how nice it was to hear when the son said once: "Why did not you do such pancakes before? They are best for you! ". And I myself, frankly, I do not understand: they did not work, they did not work, but suddenly they became!

And I do this.

I take milk (1 liter), warm it up lightly, and if I want to make more pancakes, and milk is only liter, I just add a glass of warm water and break 2-3 eggs there, depending on their size. I beat it gently with a whisk, add a couple of spoons of sugar, salt with a half teaspoonful, mix again and start injecting the sifted wheat flour of the highest grade, gradually - first a glass and a half, stir well with a whisk, but this is very small, I take a ladle and look how it will be Drain the batter - you should not get too thin a trickle and necessarily continuous.

If the dough is still very liquid, then I add the flour slowly, constantly kneading it so that there are no lumps. And I add a little soda to the dough (about a third of a teaspoon, about), by extinguishing it with a few drops of vinegar or sour cream (you can not extinguish it, but then the taste of soda will remain) and add about a tablespoon of vegetable oil. I mix everything thoroughly with a ladle and let it stand for 10-15 minutes, so that all the flour should be dispensed properly.

Yes, another nuance - if you want to get very thin pancakes with a lot of holes, then before the baking, pour a little bit of steep boiling water from the teapot into the dough and stir as if shaking. Now everything - you can start baking pancakes.

The bottom of the pancake pan should be very clean, and if it's not Teflon, then for the truth, that nothing will be burned on it, burn a tablespoon of the grinded salt, then remove the salt, brushing off the remains with a dry towel and starting to bake pancakes, Lubricate the hot surface of the frying pan with either vegetable oil or lard, after each pancake. Do not add oil to the frying pan all the time. Make sure that the frying pan is very hot - this is important, otherwise you can get the first pancake lumpy and there should not be too liquid dough, otherwise the pancake will also not easily turn over.

We pour out a portion of the dough onto the quartz, distribute it evenly, shaking from side to side. Bake delicate pancakes in milk on high heat very quickly - as soon as the edges become redden, turn the pancake to the other side. On the other side the pancake is baked even faster, so do not go anywhere.

Finished pancake take off on a plate, right there in the frying pan pour out a new portion of the dough and until the next pancake is baked, lubricate the previous melted butter while it's still warm. On it we spread the next ready pancake and so on - oiled pancakes in the pile will be soft and tasty - take off and eat with sour cream, with condensed milk, with jam, or make stuffed pancakes with your favorite stuffing!
