What is "Aigues"?

Speaking of exotic or old drinks, the first thing that comes to mind is alcoholic cocktails of tropical origin. Modern bars or restaurants usually offer a standard range. Almost everywhere you can order "Bloody Mary", "Black Russian" or "B 52", but not in every institution will understand the client who will order "Egg beer" or "Milk for the elderly." That's the way in Scotland called the cocktail "Eg-feet." This is essentially the usual "Gogol-Mogol", which is known in Russia since ancient times, but at the same time it adds milk, and in some cases, alcohol.

The culture of the use of such drinks on the basis of eggs and milk came to Europe in the XVII century. More precisely, this recipe is well established in France, where in the famous "Hariss Bar", which exists more than a hundred years and deals only with the sale of cocktails, you can buy "Centennial EG-feet" according to the recipes of those times. At the same time, even the real professionals in the preparation of this product argue that with a very small amount of ingredients and a fairly simple "Eg-Foot" cooking technology requires a special approach to the choice of products and the order of mixing of the components.

To make such a cocktail, you need eggs and milk. This is the basis of the drink, and the whole process will be to mix these ingredients. Eggs are worth taking home, because in them the yolk has its own unique taste and color. Instead of milk, many prefer to use cream, which also works well with domestic eggs.

Talking about a certain proportion when preparing a drink like "Eg-feet" does not really make sense, because it will always come out with a definitely new taste and have its own shade. Therefore, all the above norms can be considered very conditional.

For a holiday drink (4 servings) you will need:

- 4 eggs;

- milk - 150 ml;

- Ice cream (cream) - 200 ml;

- cognac - 100 ml;

- dark rum - 100 ml;

- chocolate liqueur - 100 ml;

- coffee liquor - 100 ml;

- sugar - 30 g.

To properly prepare "Eg-feet", it is necessary to separate egg whites from yolks. Then, in a separate container, pour the yolks and then beat them, then add milk, ice cream and all the alcohol. Then mix the mixture thoroughly and put it to cool.

At this point, you can whip the protein left over from the eggs, along with the sugar. We will stack it with a cap on top of a chilled cocktail, and if desired we can even decorate with grated chocolate.

This "Eg-feet" is most suitable for holidays. It is served in a large crockery directly on the table. Although some prefer to dispense portion by small, but wide glasses. Serve, pre-stirring the cap of protein. Usually such a drink is used cold, but there are recipes where the prepared mixture needs to be heated, which many connoisseurs of national traditions react very roughly. Therefore, a hot drink already in many establishments began to be called a different name, and a whipped raw yolk with the addition of milk will always resemble a real cold Scottish "Eg-feet."
