- three-kilogram carcass of turkey;

- 200 grams of chestnuts;

- juniper berries;

- 150 grams of prunes;

- 150 grams of boiled sausage and the same amount of bacon;

- bay leaf, rosemary, pepper and salt;

- dry white wine;

- brandy;

- several tablespoons of butter and vegetable oil.

Boil the chestnuts, pre-soaked them in salt water, adding a few juniper berries and two laurel leaves. Cook them for about half an hour until they get a state of complete digestion. Now soak the prunes in warm water. To do this, you just need to fill it with water and let it stand for a while.

Further, if you bought a turkey with insides, you will have to gut it yourself. The stomach and liver are the ideal ingredients for the filling. Spray on fire, thereby removing the remaining fluff and feathers. If there is a desire, you can remove the bones, but this is an amateur.

For the filling, you need to fry the already welded and dried chestnuts in a frying pan. Put on the bottom of small pieces of butter, then break a few roasted chestnuts (leave the rest intact). Remove prunes from the prunes and cut them.

Take a large pot, put into it finely chopped boiled sausage, prunes, chestnuts and bits of bacon. All this season with salt, nutmeg and pepper. Pour a small glass of brandy into the resulting mixture. Number choose according to your taste. All mix well. Just do not knead the ingredients, making the mixture completely homogeneous.

Now stuff the resulting turkey mixture and sew it with a white thread. Just do not need to be too dense to kill a bird, because during cooking, you can get out the entire filling. For greater strength, tie the turkey with a strong thread. On top, put a few slices of bacon, so it will turn out softer.

After all done, you need to leave the bird for about two hours in a cool place. After that, grate it with a mixture of pepper and salt and put in a large pan or frying pan. Add a few spoons of sunflower oil, a few bay leaves, a garlic head, a bunch of rosemary. Now everything is ready, you can proceed to the next step.

Prepare the turkey in a preheated to 180 degrees oven. The cooking time can vary slightly (2 or more hours). It depends on the size of the bird. Periodically sprinkle turkey with broth or wine. In the last 15 minutes, increase the temperature in the oven. You can do a little differently: put the bird under the grill, it will give her a beautiful view and mouth-watering crust.

Serve the best turkey whole. Put it on a cutting board that fits the size, and cut directly on the table.
