Masala-tea

Masala-tea was first cooked in India. Thanks to its rich aroma and taste, it subsequently became popular in Europe.

What is this drink? This is tea with spices and milk. The main ingredients are: green and brown cardamom, ginger, cloves, cinnamon and pepper. In addition, quite often in its preparation, nutmeg, fenugreek, fennel and anise are used. Sometimes vanilla, coriander, Jamaican pepper or condensed milk can be added . In order to sweeten, you can use white, and preferably brown or palm sugar. Some people use honey for this purpose.

Masala tea has many varieties: whipped, frozen, steamed, mixed with ice cream or yogurt. It turns out the most delicious, if for cooking use quality tea.

There is no traditional recipe for making a drink. In India, almost every family uses its own way, passed down from generation to generation.

Recipes

1. Boil 500 ml of water and pour it 50 g of black large-leaf tea. Crush in mortar: 5 pcs cloves; 2 grams of cinnamon, cardamom, nutmeg (grated on a grater), star anise; 1.5 g of fresh ginger; 40 g of brown sugar. Put for 2 minutes on a small fire, and then pour 500 ml of milk. When masala-tea boils, turn off the fire, cover and let it brew for a few minutes, and then drain. Ready to pour the drink on the cups.

2. In a deep saucepan bring to a boil 250 ml of milk. Mix the crushed spices: 1,5 g nutmeg, 5 pods of green cardamom, 4 sticks cloves, half-stars badjan, 2 g fragrant pepper, 2 g fresh ginger, 2 cinnamon sticks and add sugar to taste. Then pour them into a saucepan with milk, stir, cover and turn off the fire. Infuse for 10 minutes.

Brew 8 g of black tea in 120 ml of water. Pour it into a pan to the rest of the ingredients. Bring again to a boil. Allow 5 minutes to infuse, strain and pour into a warm kettle.

3. In a mortar grind cardamom, a stick of cinnamon, ginger and peppercorn. Add black tea, add water and boil, stirring constantly. After a minute, pour the milk and bring to a boil. Pour sugar to taste and after a minute strain through a strainer into cups.

A few tips

Do not put milk with spices on a strong fire, as it can curl up. It is undesirable to use a lot of cloves, which, thanks to the large amount of essential oils contained in it, can kill the whole fragrance.

To make good tea you need quality spices. It is better to use fresh milk, then it will greatly improve the taste of masala. You can experiment with different seasonings and come up with your own recipe for a fragrant drink that will cheer you up at the beginning of a new day and give strength in the fight against work days.
