How to cook shulum: a recipe with a pearl barley

Shulum is a rich and thick soup, which is prepared from game. In this case, there are many ways to prepare this dish, which can differ not only in the number of ingredients, but also in their composition. It even goes so far that there is a recipe for shulum from beef and even chicken. However, real gourmets and hunters who consider this dish their professional, prefer to cook it only from game, or rather, from a bird, although in the Caucasus it is made from lamb. Also, there are a lot of opinions related to what kind of groats in it to put and whether it should be done at all. At the same time you can find such shulum (a recipe with photographs), which does not look like a rich soup, but is a kind of soup. It does not even put potatoes. That is why it is worth preparing a full dish for the first time, and only then choose components for your own taste.

Ingredients

To prepare you will need:

- wild duck - 1 piece;

- onion - 3 pcs .;

- potatoes - 6 pcs .;

- tomato - 2 pcs .;

- salad pepper - 1 piece;

- pearl barley - 0.25 cup;

- Bay leaf;

- garlic;

- dill;

- pepper;

- salt;

- Spices (at the discretion of the cook);

Meat preparation

First of all, you need to pluck a bird. Then it is gutted and singed at the stake. So you can rid the meat of the remains of feathers and give it a characteristic scent, which is so famous for shulum. The recipe for this dish involves the use of giblets, but since parasites can be introduced into the liver of a wild duck, we leave only the carcass, heart and stomach. Then the carcass is cut into large pieces.

Cooking on an open fire

When the meat was prepared, we put the cauldron on the fire, into which we place the duck and the bay leaf. After that, water is poured into it. To cook shulum, the recipe of which involves the use of game, the meat should be cooked for about an hour. At this point, you can do the preparation of vegetables. They should be washed and cut into large pieces, although some cooks prefer to put onions in a crushed form.

Bookmark vegetables and spices

After an hour has passed, add the onion, chopped garlic and pearl barley to the cauldron. After that, put spices in shulum. The recipe assumes the use of salt and pepper, but if desired, you can take your favorite seasonings that are good for a bird. When the pearl bar is cooked, all the vegetables are laid in the cauldron and cooked until the potatoes are ready. At the end of the process, chopped greens and dill are added.

Innings

Shulum, the recipe of which involves cooking on a fire, should be poured into a cookware. Usually these are metal bowls, which are not only practical for transportation, but also create an element of romance. In each plate necessarily put a piece of meat, but the consistency of this soup can be chosen at the personal discretion of each. Since shulum is a traditional dish of hunters, it is usually served chilled vodka. However, there are such connoisseurs of traditions who prefer to use natural alcohol with this dish - it is often taken for hunting as a warming agent.
