Tkemali from plums for the winter - the famous Caucasian sauce

We know a lot about the Caucasian cuisine . How many dishes have become loved all over the world: satsivi, khachapuri, kharcho, adzhika and others. Some recipes got their second birth, were changed a little, but it did not become worse. Famous tkemali sauce for the winter is not so popular with our housewives. But this is in vain. It has an unusual taste: sweet, slightly spicy, with a delicious aroma. It is not difficult to prepare it, but some spices are required.

Tkemali from the plums

This recipe uses red plums. Take a kilogram of fruit, 250 milliliters of water, two tablespoons of dried dill, a garlic head, three small spoons of coriander, 1.5 tablespoons of red pepper (ground) and two tablespoons of dried mint. Now we start to prepare the tkemali sauce from the plums for the winter. Cut the plums in half and put them into a saucepan. We pour water into it and set it on a slow fire. They must cook until the peel and bones are easily separated. Next, drain the liquid into a separate bowl, and from the sinks do the mashed potatoes. Green sauce

Depending on the variety and color of the plums, a sauce of different shades is obtained. The taste is also slightly different, so choose the fruit of the required degree of maturity. Now prepare the tkemali sauce from the green plums. Take two kilos of fruit, a large bunch of coriander, two heads of garlic, a little sugar (to taste), salt and ajiku from green pepper. Plums we put in a pan and we fill them with water. We put on average fire and cook until soft. Then turn off the fire and let the plums cool down, without pouring out the broth. Then drain the liquid into a separate container. Plums are wiped through a sieve, removing the peel and bones. Garlic is cleaned and crushed, greens finely chopped and crushed in a mortar with garlic. Add this mass, as well as salt in the plum sauce. If the witticisms are not enough, then add adzhika. Salt and sugar ripen to taste. Tkemali sauce from plums for the winter is ready. Pour it into suitable containers and close.

Yellow sauce

This sauce is prepared from yellow plums (cherry plums). To do this, you need a kilogram of fruit. 50 grams of sugar, garlic, 20 grams of salt, a pepper pod, 50 grams of cilantro and dill, and half a spoonful of coriander. Tkemali sauce from yellow plums is prepared according to the following recipe. We take plums and let them through the meat grinder, removing the bones. Add sugar and salt to this mixture. Cook the sauce for 5 minutes. After that, add finely chopped garlic, greens, peppers and spices. When the sauce boils, remove it from the fire.
