"Alfredo" - pasta with chicken, shrimps and other ingredients

"Alfredo" is a pasta that has its own history. It was created several decades ago. The author of the dish is an Italian chef named Alfredo. Once his beloved wife fell ill. She lost her appetite. But the pasta, cooked in a tender creamy sauce, brought the woman to life.

The cook was delighted with his wife's recovery. He began to prepare this dish in his restaurant. From customers there was no release. Later, Alfredo began adding chicken and other ingredients to the pasta. As a result, the dish became more nutritious. Now there are many variations of the Alfredo pasta. Some of them are presented below.

Classic sauce Alfredo

Necessary ingredients:

  • Cheese Parmesan - enough 80 g;
  • Salt - 1/3 tsp;
  • 300 g of thick cream (fat content in the range of 20 to 30%);
  • Black pepper in the ground form - on the tip of the knife;
  • A 20-gram piece of butter.

Preparation:

  1. In a deep saucepan, pour the cream in the right amount. The fire is reduced to a minimum. We are waiting for the moment when the cream begins to boil.
  2. In the same pan, add oil.
  3. Let's do cheese. The third part is left on the powder. The rest is cut into pieces and sent to cream and butter.
  4. Mix the ingredients in the saucepan. We got the sauce Alfredo for pasta. We water them with cooked pasta. Thoroughly mix. Without delay, we serve the dish to the table, distributing it on plates.

Pasta "Alfredo" with shrimps

Grocery set:

  • For ½ tsp. Black and red hot pepper;
  • 350 g paste Fettuccine;
  • One bulb on the side;
  • 1 bunch of parsley;
  • Peeled shrimps (any, except for tiger) - 750 g;
  • Fatty cream - 2 cups;
  • 1 tsp. Dried basil;
  • Parmesan in grated form - 1 glass;
  • A 50-gram piece of butter;
  • Garlic - enough 4 denticles.

Practical part

  1. Onions and garlic is cleaned, crushed. We send it to a hot frying pan. Fry by applying oil. Sprinkle with red pepper. After 2 minutes we add already peeled shrimp. Frying, turning from one side to the other.
  2. When the shrimp gets a nice pink shade, add 350 ml of cream to them. We are waiting for the liquid to start boiling. Turn off the fire.
  3. In a saucepan with warmed salted water, place the paste with fettuccine. We cook for 8-10 minutes.
  4. When the pasta is cooked, pour 300 ml of water into the bowl, in which it was cooked. The rest of the fluid we do not need. We merge it from the pan. We wash the macaroni in cold water. Then we send it to the frying pan where the dressing is located.
  5. Add the remaining 150 ml of cream. We cook the dish for another 10 minutes. Do not forget to stir it.
  6. Sprinkle the pasta with pepper and grated Parmesan cheese. Stirring. We mark 5 minutes. We decorate our dish with chopped basil and parsley. Fettuccine is served on the table immediately after the cooking process is completed.

Pasta "Alfredo" with chicken

Grocery list:

  • 2 tbsp. L. Wheat flour and refined oil;
  • Garlic - one tooth is enough;
  • 90 g of Parmesan and 3 tbsp. L. Curd cheese;
  • Milk of medium fat content - 1 glass;
  • 1 tbsp. L. Butter and chopped parsley;
  • Chicken fillet - 2 pieces;
  • For 1 tsp. Lemon peel and spices;
  • 350 g paste Fettuccine;
  • Pepper, salt - to taste.

Step number 1. Where do we start? In salted water, boil the paste. This process will take 8-10 minutes. We pour the water out of the pan not into the sink, but into a separate container. It is still useful to us.

Step number 2. Chicken fillet cut into pieces. Place in a hot frying pan with butter. Fry for 5-7 minutes.

Step 3. In the saucepan, melt a piece of butter. There also put grated zest and chopped garlic. The roasting time of these two ingredients is 20 seconds. Add the flour. Fry another minute, stirring with a shovel. Introduce a glass of milk. This time we take a whisk in our hand. We will stir the dish to them. The next ingredient that goes to the saucepan is cheese cheese. Stir it until it dissolves in the sauce. Add 2/3 grated "Parmesan". Mix again with whisk.

Step 4. Pour the prepared sauce Alfredo. The paste should be hot. For a better "bunch" of ingredients, add ½ cup of water, drained from the pan. That's not all. In the pasta with sauce we put roasted chicken pieces. Gently mix.

Step number 5. Put our dish in a deep warm plate. Sprinkle with the remaining amount of grated Parmesan, chopped parsley or green basil. If desired, you can add pine nuts or peeled pumpkin seeds. But keep in mind: the caloric content of the dish will increase.

Mistresses for a note

  • For pasta, we choose only pasta made from durum wheat. Otherwise, instead of a delicious dish, you get a mess.
  • We cook the macaroni to the aldente state (until half-ready). How can this be checked? If the cracking of macaroni is hard, and the tooth feels resistance, then it's time to turn off the fire.
  • After cooking, heat the pasta in a frying pan. Then you can add the sauce "Alfredo". The paste will not stick together. So, the dish will look more aesthetically.
  • Want to get a more delicate sauce? Then stop using salt, pepper and some spices. And for piquancy, add the rubbed clove of garlic.
