Fish in marinade. Tasty and unusual

There are many options for cooking fish in the marinade, which are undeservedly forgotten. Eastern cuisine is also rich in recipes, which use marinades with a sharp accent. The fish in the marinade turns out to be more spicy, with a pronounced taste.

So, prepare the fish in sweet and sour marinade. We need about 500 grams of white fish (haddock, hake, etc.). But you must first prepare a marinade. To do this, take a small frying pan and fry on it a tablespoon of coriander seeds with the addition of the same amount of vegetable oil. Then pour the same Bulgarian pepper, which is pre-cut into small slices or straws. Add about two cloves of garlic (sliced), a tablespoon of curry, a bay leaf and 300 grams of sliced tomatoes (if there are no fresh ones, you can take canned). Cook the sauce for about 10 minutes, not forgetting to stir while the ingredients are not burnt. Then pour apple cider vinegar (5 tablespoons) and add salt (one teaspoonful). We cook the marinade for about 8 minutes.

Separately, in a cup, whisk a little egg. Mix flour with salt. We put a pan on the fire and pour in one spoon of oil. Prepared fish should be wrapped in flour, and then dip into the egg. After this procedure, proceed to the frying. We put the pieces into a frying pan and fry for three minutes on each side. Then you should put the fish on a paper towel, and it will absorb excess fat.

Then we send the fish to the skillet with the marinade. We spread it among vegetables and distribute it evenly. The fish in the marinade must be covered with liquid. If it is not enough, add a little water. Frying pan is sent to the oven for 15 minutes. After that, the fish in the marinade will be ready. When serving it should be decorated with twigs of cilantro.

The following recipe is very popular in Japan. It will take 4 steaks of tuna of medium size. First you need to prepare a marinade. To do this, mix three tablespoons of soy sauce, a teaspoon of ground ginger, two tablespoons of sugar, a fourth of a glass of wine vinegar and half a glass of canola oil. Mix all the ingredients and spread the tuna into this mixture. Tightly close the dishes. Fish in the marinade should lie about 30 minutes. Periodically turn the pieces.

After that, we take out the fish, sprinkle with salt and pepper. Pre-heat the grill. Grate grease with vegetable oil. Spread pieces of fish on the grill and fry on each side for five minutes. Serve this dish with vegetables or rice.

This marinade can also be used before cooking fish in a double boiler.

Various ingredients can be used to prepare the marinade. For example, vinegar can be replaced with lemon juice. Also in these cases white wine is used. With fish, various seasonings and spices are perfectly combined. They can be used at their own discretion, to their taste.
