Khychin stuffed with potatoes

In the Caucasus, one of the national dishes of Karachais and Balkarians is Khychin. These are thin flat cakes made of wheat flour with cheese and greens, meat or potatoes. Roll them out as thinly as possible, and fry in a dry frying pan.

Before you start kneading dough for hitchins, you need to prepare the filling, namely to cook on the stove the peeled potatoes (2 pieces). When it is ready, it is necessary to bring it to a consistency of mashed potatoes and cool it. Then add pickled cheese (200 g), garlic (2 slices) and greens (optional) to the potatoes.

The dough on the hitchin is kneaded from kefir (250 ml), flour (2.5 tbsp.) And salt (1 tsp). After it stops sticking to your hands, the same balls are formed from it and leave them to "rest" on the table for 15 minutes. Then each ball must be flattened, put inside the filling (the size of a ball), poke the edges up and turn the cake down with a seam. Now it needs to be rolled out, and then fry in a hot frying pan. After that each cake with potatoes and cheese is smeared with butter and stacked on the previous one. Serve to the table instead of bread.

Tatar tortillas with potatoes in a frying pan

Kystyby is a traditional dish of Tatar cuisine. Externally is a thin cake of fresh dough, which are served folded in half and with a filling in the form of mashed potatoes. Ready cakes with potatoes are very satisfying.

For the preparation of the filling, it is necessary to boil potatoes until ready. Then it should be crushed with mashed potatoes with milk and butter. The finished mashed potatoes should be wrapped in a warm blanket, so that it does not cool down while the tortillas are roasting.

From flour (2 ½ tbsp.), Water (200 ml) and salt to prepare a fresh dough. Give him a "break" for 15 minutes, after which you can start rolling out flat cakes. To do this, pluck the small balls (50 g each) one by one from the general test piece and roll them thinly. Each cake fry from two sides in a hot frying pan. In the same way, cook all the cakes, lubricating each butter and stacking them with a pile.

Put a thick layer of mashed potatoes on a half of the finished cake and cover with a second half. Top with butter.

In India, flat cakes are prepared as follows:

  1. Knead the dough from flour (3 items), water (1¼ cent.) And salt. If necessary, you can add water or flour to achieve the desired consistency of the dough. After mixing, put it aside until the filling is ready.
  2. Boil the potatoes (2 pcs.) Until cooked. Slightly cool, then add roasted onions, coriander and cumin (1/4 tsp), salt to taste.
  3. Form a cake. First the dough is divided into 12 parts. Each piece roll into a ball, then flatten it in the hands. In the center of the flat cake put a little potatoes (the size of a tennis ball) and cover it with a dough from all sides. Should get a ball of dough stuffed inside. Roll it with a rolling pin into a cake with a diameter of 15 cm.
  4. Fry the cake in a dry frying pan for 30 seconds on each side.

Cake with stuffing from potatoes and ham

Everyone loves fried cakes, even though they are not at all useful. As an alternative, we offer a recipe for flat cakes with potatoes, which are roasted not in oil, but in a dry frying pan. The dough for them is prepared from kefir (1 tbsp.), Soda, salt, sugar (½ tsp) and flour (how much will it take). Eggs do not need to be added. Form the balls from the dough and put them aside to "rest" for 15 minutes.

For the filling, it is necessary to boil the potatoes, make mashed potatoes, add ham and 2 raw eggs. All carefully knead and roll into balls the size of the dough. Next, you need to make a flat cake in a manner analogous to the formation of khichin. Fry cooked scones with ham in a dry frying pan, and then smeared with butter.

Cakes with potatoes are very satisfying. You can take them with you to work as a snack or give your child to school.

Lefs (Norwegian potato cakes)

Delicious tortillas can be prepared with potatoes not only in the form of a filling, but also as one of the ingredients of the dough. Roll them out quite hard. Potatoes make the dough too sticky, so you need to constantly pour flour under the rolling pin.

Thin potato cakes are cooked in Norway, and they are called lefsa. For their preparation you will need cold boiled potatoes (400 g), flour (200) and salt (1 tsp). From these ingredients knead the dough. Depending on the type of potatoes, flour may need more (about 50 grams). The dough is divided into 8 parts. Each ball alternately rolled into thin cakes and fry in a dry pan. When not "flat pockets" will be formed, it's time to turn it over to the other side. Roll out the next cake you need only after fry the previous one. Otherwise they will all stick to the table.

Ready cakes with potatoes piled up in a pile and covered with a damp towel to make them soft. Of this amount of ingredients, 8 potato cakes are obtained.

Finnish potato tortillas Perunarieska

Another way of cooking potato cakes, this time Finnish. This is not only a very tasty alternative to bread, but also one of the ways to recycle stale (yesterday's) mashed potatoes. Cakes from potatoes are prepared from dough, which includes flour (2 items), cold mashed potatoes (2 items), eggs (2 pcs.) And salt.

The resulting dough should be divided into 4 parts. Each ball of dough squeezed into a cake with a thickness of not more than 5 mm. Then prick each of them with a fork and send to the oven, heated to 250 degrees for 15 minutes. Roll up the finished tortillas in a clean towel so that they become soft, and you can immediately be served to a table with butter.
