Adjika with horseradish. A keen addition to many dishes

Adjika with horseradish perfectly approaches to various dishes from meat and a bird. It is served to dumplings and pilaf. Her taste tones from slightly sweet to sharp make any dish more saturated. This seasoning can be used as a marinade for meat dishes. We offer several recipes.

Adjika is prepared as follows. It is necessary to take one kilogram of carrots, onions, sour apples and bell peppers. Tomatoes will need 2 kilograms. For the recipe, you also need to take a glass of sugar, 100 grams of garlic, half a liter of vegetable oil, half a glass of sea salt (preferably with spices), 100 milliliters of vinegar 9% and three chili peppers.

All vegetables should be cleaned and rinsed well. Apples are also washed. From tomatoes, make tomato paste using a meat grinder or blender. Pour it into a saucepan and put it on the fire. In the meantime, we grind all the other vegetables with a meat grinder. Apples are ground, after removing the core.

When tomato boils, put vegetables and apples in a pan. Next, we infuse vegetable oil, rye salt and granulated sugar. All is very well mixed. The recipe for preparation of Adjika suggests its gradual boiling. Therefore, cook it for an hour, stirring constantly. Next, you need to put the garlic, passed through the press, in a saucepan and pour the vinegar. After 5 minutes, everything is ready. It remains only to pour it on the cans and close the lids. When Adzhika cools down, it can be removed to a cooler place. If you do not know what you can cook from tomatoes, then use this recipe.

In some cases, a little digress from the classic recipe, adding new ingredients. This gives it a more piquant taste. Adjika with horseradish is prepared as follows. It will take two kilograms of tomato, one kilogram of Bulgarian pepper (preferably red), 300 grams of horseradish and the same amount of garlic and pepper bitter, two-thirds of a glass of vinegar 9%. Add salt to taste.

To adjika with horseradish it turned out more homogeneous, the tomatoes removed peel. To do this, they must be cut crosswise and lowered into boiling water for 2 minutes. After that, we put the tomatoes in cold water. As a result of this procedure, you can easily remove the skin from them. We cut the tomatoes into 4 parts. In peppers of two species, we remove the seeds and the peduncle. It should be rinsed well and cut into pieces.

Now grind vegetables with a blender or with the help of a meat grinder. The more homogeneous the consistency, the better. The root of horseradish should be cleaned and grated. If adzhika with horseradish will be used immediately, you can simply mix all the prepared ingredients, add the garlic, passed through the press, to them and serve them to the table. For harvesting for the winter, boil tomato with vegetables, then add horseradish, garlic and spices. After five minutes of cooking, it will be ready. We pour adzhika on the cans and leave to cool. Then we remove the containers in a place having a lower temperature.

It should be noted that the real Adzhika, which is made in Georgia, does not include tomatoes. It is very sharp and spicy. Therefore, choose the recipe at your discretion.
