Light summer soup with potatoes and tomatoes is ideal for both adults and children's menus. In its composition there are many vegetables, so it turns out not only tasty, but also useful. In modern cooking there are many recipes for the preparation of such soups. The simplest of them will be described in today's article.

The postal option

Soup with potatoes and tomatoes, prepared according to the technology described below, does not contain a single gram of meat. Therefore, it can be safely called vegetarian. To cook such a dinner, check in advance whether there is in your kitchen:

  • 3 ripe large tomatoes.
  • 1.2 cups of wheat cereals.
  • 3 potatoes.
  • A couple tablespoons of lean oil.
  • 100 grams of any processed cheese.
  • Onion bulb.
  • A tablespoon of dried paprika.
  • Salt, herbs.

Process description

This simple soup with tomatoes and potatoes is prepared literally in half an hour. This speed is explained by the absence of meat, which requires a long heat treatment. In a saucepan pour two and a half liters of filtered water and send it to the stove. After the first bubbles appear on its surface, carefully washed with rinds of wheat and chopped potatoes. All this is cooked at minimum heat for ten minutes.

Then, in a saucepan, in which a light vegetable soup with potatoes and tomatoes is prepared, the cream cheese is sent. After it completely dissolves, the same is added pre-browned onions and fried tomatoes. All this is salted, seasoned with paprika, brought to a boil and removed from the hob. Immediately before serving, the soup is decorated with chopped dill and chopped green onions.

Variant with chicken

This soup with potatoes and tomatoes is cooked on meat broth. Therefore, it is more satisfying than the previous version. Its taste largely depends on the quality of the vegetables used. Mature tomatoes will give the dish a light sourness. And the underserved fruit will make it taste more saturated. To prepare this soup you will need:

  • 300 grams of chicken meat.
  • 1.5 liters of water.
  • A couple of potatoes.
  • Average carrot.
  • A couple of tablespoons of rice cereal.
  • A stalk of leek.
  • 4-5 fresh tomatoes.
  • Tablespoon lean oil.
  • Salt, spices and lemon.

Sequencing

The washed chicken is poured with cold water and sent to the stove. As soon as it boils, carefully remove the formed foam and reduce the fire. Prepare the broth for half an hour. Then from it carefully take out the chicken, and the liquid itself is filtered and returned to the plate.

In the finished slightly salted broth load the chopped potatoes and cook for literally five minutes. Then there is laid the washed rice and immediately mix it. Otherwise, the croup will stick together and settle to the bottom.

In a separate frying pan fried thinly chopped carrots. Then to it add the crushed leeks and the cut tomatoes, from which the skin was previously removed. Vegetables stew for five minutes, without forgetting to stir occasionally. Then, along with the cut meat, they are sent to the pan with the broth and brought to the ready. Cooked and brewed chicken soup with tomatoes and potatoes poured on plates, sprinkled with chopped herbs and decorated with lemon slices.
