Nezhinsky salad of cucumbers: vegetable delicacy in winter

Canned "Nezhinsky" cucumber salad is prepared very quickly. The huge advantage of this recipe is that no additional heat treatment is required during the preparation process - that is, all the ingredients will retain their natural taste and useful properties.

Ingredients

So, first, let's define what ingredients we need. The basis is, in fact, the cucumbers themselves (1.4 kg), onions (0.75 kg), and also the young dill (about 20 grams). Despite the fact that many housewives have their own "secretaries" about how to prepare a "Nezhinsky" salad of cucumbers, the base remains unchanged. However, in addition to these products, we will need other:

  • Black and sweet pepper (2-3 peas);
  • Three quarters of a teaspoon of salt;
  • 5% table vinegar (2 tablespoons);
  • ½ tea. Spoons of sugar;
  • ½ bay leaf.

Getting Started

First of all, we try to thoroughly wash the cucumbers and cut them into thin slices (thickness - up to 3 millimeters). Large vegetables should first be cut into two or four pieces.

In addition, as already mentioned, "Nezhinsky" salad of cucumbers includes onions. We also clean and rinse it, and then cut it into half-rings of the same thickness.

As for dill, it simply needs to be rinsed with water and cut as small as possible.

We put in the dishes

Before you start to prepare a salad, you need to prepare the cans, in which you will lay it. At the bottom of them we put spices that will help make the salad appetizing, tasty and fragrant. And the main products are laid in layers, alternating cucumbers, onions and dill. At the very end, we add the ingredients from the above list (salt, vinegar, sugar, etc.). The list shows the proportions of the calculation for one jar with a capacity of 0.5 liters. After all the products are in jars, Nezhinsky salad of cucumbers is poured with boiling water so that from the beginning of the neck of the jar there is about 1.5 cm of free space.

At the next stage, the cans are covered with prepared lids and allowed to cool for 20 minutes.

Sterilization of salad

Finally, the cans containing our canned salad of cucumbers "Nezhinsky" are placed in a pan with water heated to about 40 degrees. The container itself is covered with a lid, and the jars are sterilized with a weak boiling. For half-liter enough 10 minutes of sterilization, and a liter will take about 12-13 minutes.

Some housewives prefer to diversify the taste of the dish, adding to all other ingredients a sliced sweet pepper and hot garlic.

The second option

There is another recipe for salad from cucumbers "Nezhinsky", in which vegetables still undergo minimal heat treatment. First they are cut, mixed and left for 30 minutes. Then add the oil and put on the fire, bring to a boil and, stirring, boil for about 10 minutes. Garlic and vinegar are added at the very end. In pre-sterilized cans the salad is transferred still hot, and then they put the lids down and for a few days wrapped with a rug.
