How to cook a sauce in a hurry

In my family I like sautéing. Usually I serve it with pasta, but it's like someone like it. I know those who love sauce with mashed potatoes, buckwheat porridge, pancakes. So, we prepare the sauce so.

Take pork or beef, cut it into pieces and put it in a frying pan. I take meat always by sight, counting on the fact that the gravy will turn out to be meaty. While the meat is fried, cut the onions into half rings, rubbing the carrot on the grater. First I add carrots to the meat, lightly frying, I also send the onion. I continue to fry until the vegetables become soft. Then I shift the mass into a saucepan, pour boiling water and cook over low heat, adding salt, seasoning to taste. As soon as the meat is ready, I begin to add the following mass. In the dish I mix a small amount of sour cream, ketchup (tomato sauce) and flour. I add a little water, so that the flour is well stirred without the formation of lumps. Gradually I put the mass into a saucepan, stirring constantly. I continue to cook and make sure that gravy thickens. If this does not happen, then you have added little flour. Pour a little more flour into the plate, dilute with water and pour into the gravy. Now everything should turn out. And the last: I always add to this dish a clove of garlic, previously shredded. It gives the sauce a special flavor.

How to cook mushroom sauce

We need a gram of thirty dried mushrooms, two or three tablespoons of table flour and vegetable oil, as well as salt, onion and pepper to taste.

So, it's delicious to cook sauce from mushrooms. Very simple. Dried mushrooms thoroughly rinse and pour water for about five hours, so they are thoroughly soaked. If you have time to spare, then you can do it tricky: soak the mushrooms in boiled water. Although, this is highly undesirable. Note that mushrooms after soaking should be transferred to another plate, and then pour them with infusion, which should be filtered through several layers of gauze in order to get rid of sand. We put infusion with mushrooms on the fire and start to cook (fire make small).

Rinse the boiled mushrooms with warm water, and then finely chop. Fry the onions in a frying pan. Prepare a dressing from flour. To do this, mix it with vegetable oil in the amount indicated just above. Refueling should be cooled, then pour into it a mushroom broth and dilute. Cook, periodically removing the foam. Add the chopped mushrooms and onions to the sauce, add salt, black pepper and cook for another ten minutes. This sauce will be even more delicious if you add a little sour cream to it.
