Cabbage salad - a recipe in Ukrainian

Cabbage salad (recipe in Ukrainian) - more dry, crispy and soft to taste than sauerkraut in German style. Such a dish is very tasty in itself, and as an ingredient in various soups and side dishes.

Preparation of lettuce requires the following ingredients:

  1. The cabbage itself. Regardless of how much salad you want to cook, it is recommended to buy small and firm heads, not larger ones. Small cabbage, as a rule, has more juice and allows to get a crisp result.
  2. Carrots.
  3. Salt. It is advisable to buy sea, but the salt is also excellent.
  4. Cranberries. It is not an obligatory ingredient, however it gives the dish an extra flavor and aroma.

For salting you need a container of decent size - a jug, a large bowl or a bucket. Whatever you choose, you will have to find something big, with as much open surface as possible.

Grind the cabbage. Today many people use a food processor for this purpose, but it is quite possible to cut it with a thin chip with an ordinary sharp knife. It depends on your personal preferences and capabilities. Then you need to grate the carrots. Some add it at the end of the cooking process, but it is advisable to put it right away.

Add salt at the rate of 1 tablespoon per cabbage. Thoroughly mix carrots, cabbage and salt together with hands, squeezing liquid from vegetables. Once the cabbage slices lose their lightness and splendor, it must be folded into a pre-prepared container.

Cover the bowl or bucket with a piece of polyethylene film on top to protect its contents from flies and dust, and place something on top as a press. The best thing in this regard is a small plate or a saucer with something heavy, for example a jar of water or an iron kettle. Whatever you use, the main thing is that the cabbage is not exposed to air and kept closed as tightly as possible. The more liquid you squeeze, the more crunchy your cabbage will be.

Recipe for cooking: finishing touches

Your dish will be ready in 3-5 days. You must constantly monitor the degree of its readiness and state. From the very beginning and up to the last moment there must always be a layer of liquid above the layer of cabbage. If it is not, you probably did not squeeze it hard enough.

Keep the pot with cabbage at room temperature. If you do not have a thermometer, the optimal temperature can be determined as follows - if you feel comfortable, without removing the sweater and not including the heater - the recipe for salad cabbage for the winter will be observed. A cool room will increase the fermentation time, and finding a workpiece in a warm room will not allow you to get a good result at all.

In addition, be sure to taste the liquid that separates it. If it is too salty, lightly rinse the cabbage and fold it back. For four days you can test the taste of cabbage daily and determine the amount of salt. Once the result is complete, you can arrange the salad in a jar and put it in the refrigerator.
