Viennese waffles - a recipe for exquisite goodies

Perhaps there is no such sweet tooth who would not like sweet, crispy, with a light vanilla note, waffles. This delicacy is familiar to us from childhood, they were baked by our mothers and grandmothers, with cream and with condensed milk - we waffle the waist for both cheeks. But this sweetness was invented, we hasten to disappoint you, not in Russia at all, but in Europe, in the Middle Ages. Then the waffles were available only to kings and nobles and were considered an exquisite and expensive treat. In our time, on the contrary, the recipe for waffle is known to every caring hostess.

There are many varieties of waffles, the form, taste and way of cooking are different from each other, but they are united by one - their enticing crunch will not leave anyone indifferent. Almost every country has its own national recipe for waffles and a little secret, which makes this delicacy special, unrepeatable. For example, in Austria wafers are a symbol of Christmas. Therefore, on the eve of and during this holiday, the Austrians bake their famous Viennese waffles, the recipe of which is passed down from generation to generation. Practically at every step at this time you can buy and taste a sweet crispy waffle, watered with honey or chocolate. The main feature of Viennese wafers is their large size and soft consistency. Also in Austria it is customary to make waffle cakes, impregnating them with a creamy-chocolate filling.

Prepare Viennese waffles, the recipe of which we will give below, is not at all difficult. The main thing is to feel and plunge into the atmosphere of the national traditions of Austria, which we will try to do.

So, for the preparation of a portion of Viennese wafers we will definitely need:

  • Flour, about 300 grams;
  • 100 grams of sugar;
  • 400 milliliters of warm milk;
  • Baking powder, 1 teaspoon;
  • Melted butter, 50 grams;
  • 3 eggs;
  • powdered sugar;
  • vanillin;
  • Salt, one pinch.

Mix the flour with the baking powder. Separate the proteins from the yolks. Yolks with milk, sugar, vanilla and melted butter thoroughly whisk and add to the flour. Mix. Then, whisk the proteins into very dense foam and add half to our dough, mix. Then add the remaining proteins and bring the dough to a homogeneous consistency, not too thick. Allow the dough to stand for a while, and at this time properly heat the waffle iron. Viennese waffles - a recipe that perfectly suits both for a romantic breakfast, and for a nourishing child's, are extremely delicate and fragrant. Serve them with a bowl of cream ice cream, fresh berries, sprinkle with powdered sugar and pour chocolate.

In Belgium sweet wafers are prepared somewhat differently, bringing their national characteristics to the traditional recipe. Wafers are baked in a special waffle iron with a groove and are thick, but incredibly soft and gentle. For example, in Liege wafers, the recipe of which will please all lovers of this delicacy, specially add sugar crystals, which deliciously crunch on your teeth and give the wafer an exquisite taste.

To prepare these wonderful Belgian wafers, we will need specially prepared yeast dough. Mix a packet of slightly melted butter with flour and dry yeast. Whisk 2 eggs with salt, a glass of sugar and vanilla. Mix everything, pour in a glass of warm milk and add cinnamon. Let the dough stand for about half an hour.

Then add the sugar crystals and mix. Form small dough balls from the dough and bake in a waffle iron until golden brown. When serving, sprinkle with powdered sugar and grated almonds, pour chocolate.

But in the capital of Belgium, in Brussels, baked the so-called Brussels waffles, in consistency and preparation very similar to the Viennese waffles, the recipe of which we considered, and on their colleagues from Liege.
