The emergence of the Sushi

This popular dish in our day arose over a thousand three hundred years ago. The name of this dish is "sushi", translated as "pickled rice".

The first sushi appeared in the countries of South Asia, from there later they "reached" China. And already from the Chinese, got to Japan and the secret of storing fish in rice. The dressed fish was salted with layers and put under a press of stones. After a couple of weeks, the press was removed and replaced with a lid. After a couple of months of fermentation, the fish was considered ready to eat. Unusual sushi ("narezushi") was prepared from freshwater carp Funa. The dish had such a sharp and strong smell that it was difficult to determine from which fish it was cooked. The Kansai sushi has a long history of occurrence, and only a small part of the Japanese know about it. They are also more difficult to prepare than "Naresuchi".

At the end of the 17th century, due to the rise in rice production, rice vinegar was prepared , it was added to rice to add a piquant, sour taste, as well as fish and a variety of seafoods with this rice were already served in raw form, eliminating fermentation from the cooking process. Initially, there were special forms of pressing rice, sushi in today's form appeared in the XIX century in the city of Edo.

For the first time, an ordinary sushi - the master dazzled the Koloboks of rice, added a little wasabi covering everything with a slice of fish. The dish was called "nigiri-sushi". In Japanese, Nigiri means "handful," so much is taken with the fingers of rice to eat in one go. Nigiri-sushi are eaten with chopsticks or hands.

There is also ginger in the sushi cooking, this root stimulates blood circulation, protects against scurvy and gives you the opportunity, like wasabi to store fresh fish for a long time. Ginger is even used as an antidote.

In principle, since then the process of making sushi has been unchanged, however it does not cease to improve and develop, replenishing with new and new recipes. Thanks to this, the number of connoisseurs and admirers of this unusual dish is growing every day. The reason for this is banal. For the preparation of appetizing and delicious sushi, one should not follow the established requirements, here you must give vent to fantasy. The peculiarity of sushi is that you only need to understand the principle of their preparation, invent your own recipes with a variety of ingredients, the amount and range of which can limit only your personal taste preferences.
