Spicy Adjika: recipe with horseradish

Adjika is a wonderful fragrant seasoning. It not only fuels appetite, but also gives piquancy to a variety of dishes. Traditionally it is made from red hot pepper, salt, garlic and tomatoes. Adjika with horseradish: recipe

You can prepare a spicy and spicy seasoning by having the following set of products:

  • About 1 kg of sweet pepper ;
  • Ripe red tomatoes in the amount of 2 kg;
  • Sharp (bitter) pepper (pods) in an amount of 300 g;
  • Heads of garlic in an amount of 300 g;
  • Fresh horseradish root weighing 300 g;
  • Salt - 1 cup (about 200 g);
  • Table vinegar - 1 glass (volume approximately 200 ml).

First you need to prepare horseradish. If you use not too fresh roots (long dug up), they should be soaked in cold water (about 24 hours). After that, cut the peel with a knife or vegetable peeler.

Pure the indicated amount of garlic. Remove hot pepper from the stem. Wear gloves, as this product burns your hands. Remove the seeds and septa from the Bulgarian pepper.

Adjika (a recipe with horseradish) necessarily includes tomatoes in its recipe. For its preparation you can use slightly overripe fruit. Some mistresses take tomatoes with spoiled barrels (bad places are removed, and the remaining flesh is suitable for further use). Do not forget to pre-wash the tomatoes and cut the stalk.

Pepper, garlic, horseradish and tomatoes pass through the meat grinder. Add salt and table vinegar indicated in the recipe .

Due to the fact that the seasoning is not subjected to any heat treatment, all vegetables retain the maximum amount of useful vitamins and microelements. Composition:

  • Ripe tomatoes in the amount of 600 g;
  • Freshly eaten horseradish in an amount of 2 tbsp. L .;
  • A mixture of spices "For Adzhika" approximately 2-3 tbsp. L .;
  • A glass of wine vinegar (for lack of it you can use a regular dining room);
  • Garlic head;
  • A few pods (about 5) of hot pepper;
  • Sugar in an amount of 1 tbsp. L .;
  • Chopped parsley, dill;
  • Sweet peppers in an amount of 5 pcs.

Technology of preparation

Peel the tomatoes. Remove the seeds from the peppers. Peel the garlic. All the prepared ingredients are rubbed through a meat grinder (can be ground in a blender), add horseradish and mix well. Transfer the mass into a separate container and leave to stand for 24 hours in a cool place. After that, add sugar, salt, a mixture of spices, crushed herbs to the adzhika. Pour wine vinegar and mix.
