Rice with seafood - cooking recipes

As is well known, seafood is considered to be very nutritious and healthy food. It is very important that everyone's food includes at least a few similar products. That's why I would like to offer you several recipes for cooking such a common side dish, like rice in conjunction with seafood.

Rice with seafood - a recipe "in Portuguese"

Products for cooking:

  • Saffron - pinch;
  • olive oil;
  • bulb;
  • Garlic - 5-6 denticles;
  • Canned anchovies - 10-12 pieces;
  • Bay leaf;
  • Lisbon paste - 3-4 tablespoons;
  • Rice - 2 cups;
  • Dry white wine - half a cup;
  • Fillet of sea fish - 450 g;
  • Canned tomatoes - glass;
  • Mussels - 10-12 pieces;
  • Meat crabs - about 320 g;
  • Squid meat - 420 g;
  • Royal prawns - 9-11 pieces;
  • Pepper red - 2-3 pieces;
  • salt.

First it is necessary to soak saffron for 22 minutes in one and a half liters of hot broth. Then finely chop the onion, and chop the garlic with a knife. Then bring the broth, cooked in advance, to a boil over a small fire and keep it hot.

Prepare a paste of Lisbon. To do this, heat the oven to 185 degrees and place in it peppers, oiled with olive oil. Bake them for 16 minutes, then peel, seeds and cut each pepper in half. Now pepper should be sprinkled with salt, cover with food film and leave for some time at room temperature to insist. Then put it in a saucepan, add water and boil for 3-4 minutes. Then drain and cool. In a blender, mix garlic, paprika, salt, spices and baked pepper. Lisbon paste is ready.

Meanwhile, heat the oil in a frying pan and fry in it garlic, onions, while stirring constantly. Then add anchovies, Lisbon pasta and bay leaf. All this cook for about two minutes, then add the rice and mix thoroughly. After this, pour the wine and add the tomatoes.

Cook everything on a small fire, while stirring all the time. Then add the hot broth (5 glasses) in portions for 20 minutes. Then add the seafood and add the remaining broth. The dish is prepared until the mussels are opened. Served rice with seafood, the recipe of which is described above, sprinkled with herbs and decorated with olives.

Rice with seafood - recipe with vegetables

For preparation:

  • A mixture of seafood (to taste) - 550 g;
  • Rice - 330 g;
  • Red sweet pepper - a couple of pieces;
  • Celery - 1 stem;
  • olive oil.

If you use frozen seafood, then they must be defrosted at room temperature beforehand. Then they boil in salt water. Now cut the pepper along into two pieces, peel off the seeds and cut into strips. Rice should be fried in a pan with oil, then pour 760 ml of water. Then add the salt and simmer for about 14 minutes on a small fire with the lid closed.

In the meantime, peel the celery, rinse it and chop it. Then lightly fry it in a separate frying pan. After a couple of minutes, add pepper strips, pour a little water and mix everything. Cooking for another 12 minutes. When everything is ready, you need to put the dish on a large plate, and on top place seafood with vegetables. Fried rice with seafood is very tasty and satisfying. Rice with seafood - recipe with garlic

Food for cooking:

  • Mussels - 450 g;
  • bulb;
  • Garlic - a pair of denticles;
  • Carrots - 1 piece;
  • Salt, butter;
  • Rice - 230 g;
  • saffron;
  • Broth - half a liter;
  • White wine - glass;
  • Bay leaf;
  • Shrimp - 340 g;
  • Canned tuna - 130 g;
  • Thyme is a branch.

Initially, you should hold mussels in cool water, then boil in salted water until they open. Now cut the chicken and onions finely. Carrots should be chopped in thin slices, then mix all vegetables and stew for about 6 minutes in a skillet with the addition of oil. To do this, take a deep frying pan, so that it can contain rice. After the vegetables are stewed a little, you need to add rice and salt.

Now it is necessary to pour the saffron with cold water and hold it for a while. After a while add it to the broth along with the wine and pour the resulting mixture of vegetables. Lower the bay leaf there and stew with the lid closed. After this, place the vessel in the oven, where rice should be cooked for an hour at 185 degrees. At the end of the cooking, add to the rice mussels, shrimps, thyme and leave for another 17 minutes. Excellent pilaf with seafood ready!
