The dough is kneaded until it finally stops clinging to the hands. After kneading the dough, cover it and put it in heat. When it rises well, you need to lightly squeeze it and let it go up again. While the dough is suitable, let's deal with the filling. On the Don it is customary to cook a cake with a red fish or with a river in which there are fewer bones. It can be a pike-perch, which they call suloma, or, better, carp. You can use bream, but in this case you have to tinker with bones, choosing them.

Therefore, it was preliminarily cut into pieces and brewed to such an extent that it would well depart from the bones. After that, the fish bones were carefully chosen. The dough is divided into approximately two parts. The one that goes to the top crust should be a bit smaller. Roll out the dough to a thickness of 1 cm and put it on a greased baking sheet.
