Meatballs in sour cream sauce and not only

Meatballs in sour cream sauce is a dish that is cooked and eaten with pleasure all over the world. Of course, the names of this dish, as well as the nuances of cooking in different peoples are different, however, the general fact is that meatballs are balls made from meat or fish minced meat with the addition of vegetables, cereals or mushrooms that are cooked in a sauce or Broth.

It is generally believed that the "inventors" of meatballs are the Turkic tribes, but later this incredibly tasty dish was prepared all over the world, and each people introduced their own changes into the recipe. As a result, today there are a lot of recipes for cooking meatballs, and each culinary specialist will be able to choose the most suitable variant for himself.

In Russian cuisine, a classic variant of this common dish is meatballs in sour cream sauce.

To prepare this dish you need meat minced meat, and it is desirable that it was prepared from different types of meat. For example, it is always successful to get meatballs made of minced meat, cooked from pork, beef and turkey. Also it will be necessary to boil the white rice in such quantity that its weight in the finished form would correspond to one third of the weight of the forcemeat. That is, if the meat we have 600 grams, then the finished rice should be 200 grams. You will also need a large onion and chicken eggs (for our quantity of minced meat, you need to take two pieces). In addition to all of the above, you will need oil for frying, salt, black pepper and other spices to taste.

For the sauce it will be necessary to take a two-hundred-gram package of sour cream, a spoonful of butter and a full teaspoon of flour.

Preparing the dish "Meatballs in sour cream sauce" begins with the preparation of minced meat. Onions need to be cut very finely, and even better chopped in a blender or on a grater. To impart a splendor of egg whites, it is better to beat the egg whites into a foam. Now add the minced meat, ready rice, eggs, onions and mix everything very carefully, preferably with your hand. Do not forget to salt and add the spices to your taste. A bowl of minced meat is covered with a food film and put in the refrigerator for 20 minutes for infusion.

While mincemeat is standing in the fridge, we prepare the sauce. To do this, in an oil or margarine, we pass a little flour, add sour cream, season with salt and let it simmer for about five minutes.

From the prepared forcemeat we form meatballs the size of a ball for ping-pong. To make mincemeat not linden to the hands, they need to be moistened with cold water. We pan our "koloboks" in flour and fry in oil. When all the meatballs are roasted, add them to a deep frying pan, pour the prepared sauce of sour cream and let it simmer for ten minutes at low heat.

And if there is not enough time for cooking, then you can prepare a light version of the dish "Meatballs in sour cream sauce". In this case, the operation for roasting teftelek is eliminated, and the formed balls in their raw form are added in a deep form, poured into their sauce and baked in a preheated oven.
