Fried lavash in a frying pan: recipe for preparation, filling
Spring - time for picnics and outdoor activities. Fresh air invigorates, raises the mood and causes appetite. Menu in nature is simple: light snacks, vegetables, shish kebab. An excellent option - fried lavash with a stuffing. Thin cakes combine well with fish, meat, greens, aromatic spices and cheese.
This appetizer easily cope with hunger and contains much fewer calories than regular bread. In the Caucasus and the Middle East, roast lavash is a familiar food. In addition, it is used for shawarma, for serving lyulya-kebab and shish kebab, it bakes fish, cooks pilaf, meat. So the dishes are more tender and juicy.
The lavash appetizer is a universal dish, any food in a variety of combinations, including fruit, sweet cottage cheese, jams, chocolate, will suit the filling. This option will be enjoyed by children and will be a great snack for a walk.
How to fry lavash
To prepare thin cakes you need a hot surface. The main condition: oil and fat are not used. The dough is spread on a baking tray and fried on both sides. Ready lavash dries very quickly. To avoid brittleness, it is removed from the pan, sprinkled with water a little and immediately covered with a towel. Cooled cakes used immediately or stored in the freezer, just wrapped in a package.
Storage
Ready lavash is not necessary to use immediately. Some of the tortillas can be left in reserve.
The recipe for a yeast test
Wide round cakes can not be cooked easily. We offer a method how to quickly get lavash fried in a frying pan, without using fat. Yeast can be used, which we will do. Below is the version of the fresh unleavened test. So, from the products we will need:
- Dry yeast - 1 teaspoon;
- Flour - 3 cups;
- Salt - 1 tsp;
- Sugar - 0.5 tsp;
- Vegetable oil - 1 tbsp. L .;
- Water (only warm) - 1 glass.
Preparation step by step
- Mix the flour, water, oil, salt, sugar, yeast and knead the dough. The water must be necessarily warm, otherwise the yeast will not ferment and the dough will not rise. Cover with a film and wait about half an hour, until the opara is suitable. Then we knead it and put it under the film again - let it rise again. The consistency of dough should be soft, a little softer than for dumplings.
- Divide the resulting mass portionwise (approximately 15-20 small pieces), roll into balls and let stand under the film for another twenty minutes.
- Now - rolling out the dough for lavash. Sprinkle each ball with flour and roll it into a very thin cake to a semi-transparent state. Heat the frying pan without oil and fry the pita bread on both sides for a few seconds. The absence of oil is a prerequisite. Bake them only on a dry, well-heated surface.
- Ready cakes spread on a prepared board or a wide dish, sprinkle with water and immediately cover with a towel. Otherwise they will dry up and be brittle.
- It remains to prepare the filling and wrap it in lavash.
This is one of the options for using flat cakes. Some of them can be rolled up and cooked roast lavash with filling in oil or batter.
There are a lot of recipes. Convenience is that you can wrap and combine any products. Also, pita bread can be used instead of parchment for baking fish or meat, for cooking pilaf. These dishes are extremely juicy and aromatic.
Bezdorozhevoe dough
In this case, the dough is prepared much faster than on yeast. Only water, flour and oil are used. You can mix in a combine, or simply with your hands. We take:
- 350 g of flour (its number may be different, it all depends on its quality);
- glass of water;
- 30 g of vegetable oil;
- A little salt.
Flour should be poured on the table with a slide, make a small groove, pour in a little water and oil, add a little and mix the dough with a fork carefully. It takes about five minutes. The dough turns out to be tough enough. We wrap it in a food film or just cover it with a towel and give it a little "rest". After 20 minutes, the dough should be kneaded again and divided into small pieces. Each flattened by hand, roll in flour and roll into very thin cakes with a thickness of about 2 mm.
The dough can be stretched slightly by hand, it is quite elastic and does not break. Bake cakes on a well heated frying pan for a few seconds on both sides. Ready lavash spread on the board, just sprinkled with water and cover with a clean towel.
While the cakes are cooling down, we prepare the filling. It can be minced meat, fish or cheese with greens. By the way, fried lavash with cheese called "Yoka" is very popular in Armenia. It is stuffed with filling, wrapped in an envelope and fried in a frying pan in oil. Melted cheese and crispy crust make this dish terrific. The recipe is very simple, it takes a little time.
Hot snack "Yoka"
So, let's try to cook fried lavash with cheese in Armenian style. Hard cheese should be grated on a large grater, cut into greenery: cilantro, green onions, dill and parsley. Their number depends on the taste, on an average of 100 g each.
Then mix with cheese, salt, pepper. Lavash is divided into three parts, we spread the stuffing, wrap it with an envelope or a corner. We put on the heated frying pan the seam downwards and fry in vegetable oil from two parties to a ruddy crust. Serve in a warm form and as a separate dish, and in addition to broth or shish kebab.
From what to prepare the filling
Recipes of fried lavash are surprisingly simple and do not require special culinary talents. There are no exact proportions here, you can easily experiment and try new combinations of products.
For example, these are:
- Cottage cheese, salt, greens, garlic, mayonnaise.
- Cheese is hard, cottage cheese, garlic, fresh cucumber, dill, salt.
- Cream cheese, champignons fried with onions and carrots, greens, sour cream.
- Salmon, greens, fresh cucumber, Adyghe cheese or brynza.
- Boiled eggs, rice, dill, sour cream.
- Crab sticks, boiled egg, processed cheese, greens, garlic, mayonnaise.
- Smoked meat / sausage, greens, sweet Bulgarian pepper, fried onions, mayonnaise.
- Beetroot, carrots, nuts, garlic, mayonnaise.
- Shrimp, garlic, butter.
- Cheese, ham, tomatoes, garlic, sour cream.
- Mushrooms fried, pickled onion, suluguni, egg, greens.
- Brynza, basil, unsweetened yogurt.
- Processed cheese, garlic, mayonnaise, dill.
- Baked turkey, paprika, parsley.
- Salmon, sweet pepper, goat cheese, yoghurt.
- Chicken breast, green peas and garlic.
- Greek salad.
- Sour apple, pickled onion, herring.
- Nuts, boiled condensed milk.
- Apple, cottage cheese, sour cream, vanillin.
Fried lavash is served separately, with various sauces, broth. Before applying the filling, the cake is recommended to soak with sour cream or mayonnaise. You do not need much, otherwise the pita will spread. But if the mayonnaise is too small, the snack will get dryish.
Cold appetizer of lavash
If there is not much time, it is much easier to make a cold snack from cakes. You do not need to fry anything. Prepared stuffing is simply wrapped in a pita bread roll.
For convenience, it is cut into batch pieces. If you want, you can use another feed: divide the pita into several parts, add the filling to each and arrange it in the form of envelopes or corners.
As an option, you can use a whole cake and fill it with a shawarma type. In general, lavash - snack is absolutely democratic and welcomes any of the options. Include fantasy, open the refrigerator and start creating culinary masterpieces.
Cooking roast lavash in batter
There is another way to make a hot snack from pita bread in a frying pan - fry it in batter. From products we will need:
- 3 sheets of pita bread;
- Suluguni cheese - 200 g;
- Smoked chicken - 200 g;
- Champignons - 350 g;
- Mayonnaise / sour cream - 4-5 spoons;
- Dill / parsley - bunch;
- 2 eggs;
- bow.
We chop the mushrooms, cook with onions, set aside, let it cool down.
We cut the cheese into cubes. We do not in vain use the suluguni in the recipe. Roasted thin lavash is especially good with cheese that melts. It gives juiciness to the dough, helps to achieve a crusty crust.
Smoked chicken cut into thin strips or cubes. We use only meat, we remove the skin.
Grind the greens. Mix all the ingredients, season with mayonnaise or low-fat sour cream. If desired, you can add salt and ground black pepper.
Lavash is divided into four identical parts, spread out the prepared stuffing in the middle of each, turn off the envelope and dipped in the batter. To do this, forked eggs with salt.
Each envelope is laid on the heated frying pan with a seam down and fried until a ruddy crust.
We serve hot. This snack can be taken with you to a picnic and warmed up on the spot, laying out for a couple of minutes on the grill.
Sweet rolls for kids
If you plan to travel to nature with children, you can think through a separate menu based on lavash and for them. We use for this apples, cottage cheese, sugar.
If desired, you can add a little cinnamon or vanillin. We grind the fruit and send it to the microwave - so they will become a bit softer. Cottage cheese carefully grind with sugar and vanilla, if desired, you can use a blender. We connect with apples.
We spread a wide sheet of lavash with a thin layer of sour cream or thick yoghurt, put the filling and carefully fold the roll.
We heat the oven, grease the baking sheet with oil or cover with parchment and lay the pita bread with a seam down. For a golden crust, you can lubricate each top with whipped egg yolk.
Bake at a temperature of 175 degrees for about 10 minutes.
Ready-made rolls are taken out and still cut into warm rings. Let's cool down. Spread on a dish in the form of chamomile. Sprinkle with powdered sugar or sprinkle with jam.
