Preparing Doner Kebab

Shaurma is the Russian name of the Turkish Doner-kebab dish, which in translation means "wrapped roasted meat". Despite the fact that he invented this dish of the Turks, whose name is Mahmut Aygun, his homeland is Berlin. It was in one of the restaurants in this city that lamb meat was first served with garlic sauce and a garnish of French fries and salad. All these ingredients were wrapped in a bread pita.

Initially Mahmut Aigun came up with a kebab made up of meat, rice and salad. But when he came to Germany, he decided to slightly modify the dish by wrapping it in lavash. This made it possible to create a fairly convenient fast food, which is now popular all over the world.

Traditional Doner Kebab

Ingredients:

  • 400 g fillet of lamb;
  • 1 onion;
  • table. A spoonful of tomato paste;
  • Milk (2 tablespoons);
  • olive oil;
  • Spices, salt.

Preparation

Cut lamb (200 g) with thin steaks, beat off a bit and put into a container. From the rest of the meat, prepare the stuffing. Top with mutton steaks with milk and olive oil, sprinkle abundantly with spices and leave to soak for a couple of hours.

Peel the onion, chop it in a blender and mix with the stuffing. Then add the tomato paste, spices, salt and mix well. In a rectangular shape with high sides, lay a plastic film and lay out the meat on it: steaks, then forcemeat and again lamb strips. And so several layers. Doner-kebab on top of the film, tamp well and put in the freezer for a day.

Preheat a little oil in a frying pan. Thin strips of cut doner kebab and fry it. The dish is served, wrapped in lavash, with vegetables.

Shaurma in pita bread with chicken

Ingredients:

  • 8 sheets of Armenian lavash;
  • Head of Chinese cabbage;
  • 7 cucumbers;
  • 4 legs;
  • 2 onions;
  • 6 tomatoes;
  • Pepper, salt.

For sauce:

  • 500 gr. Sour cream;
  • mustard;
  • Ketchup (tea spoon);
  • 6 cloves of garlic.

Preparation of Shawarma

Chicken for this dish can be baked in the oven or, separating the meat from the bone, fry in a pan. At the same time it should be salted, peppered and greased with some marinade (mayonnaise, ketchup, sauce).

All the ingredients must be crushed (onions, tomatoes, chicken, cabbage and cucumbers).

Prepare the sauce. In sour cream it is necessary to add the squeezed garlic. There should also put mustard, ketchup, salt. You can add fresh, chopped greens to the sauce.

Lavash is best laid out on a flat surface and evenly greased with its sauce. After this, a prepared filling is placed on the edge of the flat cake with layers. The middle of the pita bread can be poured with sauce, so the dish will be juicier.

We wrap the shawarma in a tube, turning the edges and the primitive stuffing, and leave it for a while to soak. Then cut the roll into pieces, warm it in a frying pan.

Doner-kebab with beef

Ingredients:

  • 300 grams of red and white cabbage;
  • Lettuce leaves (100 gr);
  • 4 tomatoes;
  • bulb;
  • cucumber;
  • Paprika, pepper, salt;
  • Bouillon cube (2 tablespoons);
  • Bread Ekmek;
  • Fresh beef (300 g);
  • Vegetable oil (5 spoonfuls).

Preparation

Thinly cut cabbage and cucumber. Grind the bouillon cube and sprinkle the shredded vegetables. Finely chop the onions, tomatoes and meat. Preheat the oil in a frying pan. Fry the meat well with the onions, season with salt and paprika. Cut the Turkish bread along into four equal parts and place it for a few minutes in the pre-turned on oven so that it warms up a little.

When Ekmek becomes warm, wrap the stuffing in it and pour the garlic sauce.

Helpful Tips

  • When preparing Shawarma, pay attention to the freshness of the pita bread. If it turns out to be a little stale, then when wrapping the filling, the cake can tear. Therefore, it is best to buy freshly baked lavash.
  • Shaurma is best combined with the following sauces: garlic, curry, Turkish spicy, sour, mustard-honey.
  • It is recommended to pickle the meat for shawarma first, and then after frying in a frying pan.
