Preserving zucchini - we store our favorite vegetable for the winter

Courgettes are very popular. They are good in any form. They are used as a separate dish or as an addition to other products. Let's talk about preserving zucchini, which can be eaten in the winter. These can be simple recipes or those that require a little more time and effort. In any case, such a harvest will allow you to enjoy these fruits at any time of the year.

Let's start with a simple recipe. From vegetables, we need only sweet peppers, onions and zucchini or zucchini. We take one kilogram of zucchini and one piece of sweet pepper, preferably of different colors. Beforehand it is necessary to wash the vegetables. Squash is cut into cubes (large enough). Do not peel the skin. Sweet peppers are cleaned and cut into large cubes. Onions are also processed and cut into rings.

Sweet pepper and zucchini mix and spread into cooked jars. In each of them lay the onion ring, a teaspoon of mustard (seeds), one bay leaf, a pea of pepper and a sprig of dill, preferably fresh.

Now we need to prepare marinade for pouring. Take 8 glasses of water and add to them two tablespoons of any vinegar, the same amount of sugar and a tablespoon of salt. We put the marinade on the fire and let it boil. Fill cans with zucchini and pepper boiling marinade and put sterilized for about 10 minutes. Then close the metal lids. When the banks cool down, we remove them to a cooler place.

Preservation of courgettes is generally not difficult. For the next recipe, take the young fruits and carefully wash them. Then remove the peduncle and flower and cut the vegetables in circles about 3 centimeters thick. Dill and parsnip must be washed and dried. Then we put zucchini in jars and alternate them with greens, bay leaf and any spices. You can, if desired, add a pod of pepper.

To continue the preservation of courgettes, you must prepare a fill. A liter of water is poured into a saucepan and we add 60 grams of salt, about 20 grams of sugar and put it on the fire. When the pickle boils, pour 160 grams of table vinegar into it. Then pour the marinade over the jars and squash them and sterilize them. Next, close the lids and leave the courgettes cool. After that, we remove them to the cold.

You can also prepare zucchini in other ways. Preserving this vegetable for the winter can be in the form of caviar. To get one kilogram of this product you need to take 800 grams of courgettes, the same onions, 100 grams of tomato puree, 10 grams of parsley root, a little greens and spices.

Zucchini should be washed and cut, preferably in circles. Then they are fried in oil, best of all vegetable. After that, grind through a meat grinder. Onions cut into small cubes and fry in a pan. Add tomato puree, salt and pepper to it, as well as prepared greens. Stir all the ingredients and simmer on low heat for a while. After the caviar is ready, it should be placed in cans and sterilized. If desired, you can add garlic and carrots to the caviar. They are also ground through a meat grinder and stewed with vegetables.

In conclusion, canning zucchini in Korean. This is a recipe for lovers of spicy dishes. We take four pieces of zucchini, carrots, onions and sweet peppers. Bitter pepper should be taken in less quantity (1 piece), but if you like more sharply, then add more. We cut all the vegetables with straw and add them to a large container. We pour into them half a glass of vinegar, a little more vegetable oil, one tablespoon of sugar sand, as much salt, a few cloves of chopped garlic, sliced greens and a carrot dressing in Korean. All the ingredients are very well mixed and put to stew for 40 minutes. Then lay out on any cans and close the lids.
