Delicious white currant on our table

Undoubtedly, white currant is less common than a black or red variety of this berry. But it can often be found on the sites of true connoisseurs of this fruit bush. By its qualities, white currant is very different from black currant, but it is similar to red. The difference between them is only in the color of the berries and the more acidic taste of the latter, and the remaining properties are the same.

The composition of this berry is impressive. There are a lot of organic acids and pectin substances that contribute to the elimination of toxins from the body. White currant is used in cooking. It is added to pastries, sauces, desserts, it is prepared from her compotes and jam.

White currant compote

The recipe for compote is very simple. For 600 grams of white currant you need to take 400 ml of sugar syrup.

The berries must be mature, freshly picked and undamaged. To start, the currant should be sorted, separated from the brush, washed well and gently, put in a colander and let drain off.

Then you need to make sugar syrup. 700 grams of water requires 300 grams of sugar. In the boiling water, add sugar and stir. When completely dissolved, remove the pan from the fire. In the previously sterilized jars we lay the currant and pour hot syrup. Banks with a liter capacity should be sterilized twenty minutes, and half-liter - fifteen minutes. Banks immediately close with boiled lids, turn over and leave to cool.

Jam from white currant

Now let's look at how to cook white currants. For this we need the following products:

- berries - one and a half kilograms;

- sugar - 4.5 glasses.

Jam from such berries, as white currant, is cooked as follows. As for compote, the fruits are thoroughly washed and leave them in a colander to make the glass water. Then, with the help of a juicer, make juice. The cake can be put into a sieve. So the remaining juice drains. We pour it into a saucepan and add sugar. The resulting mixture is put on a plate and cook, stirring occasionally with a wooden spatula. When the jam begins to boil, remove the foam from it and cook a little more. It turns out quite a nice and delicious food. Ready-made jam is poured over sterilized jars, closed with lids and cleaned for storage.

Cake with white currant

If you want to try a pie with this berry, we can offer a recipe.

For the test:

- cottage cheese - one hundred grams;

- flour - one and a half cups;

- an egg - 1 piece;

- Ground almonds - 50 grams;

- Butter - a hundred grams;

- salt - pinch.

For filling:

- sugar - 3 tablespoons;

- yolks of three eggs;

- vanillin - 1 packet;

- sour cream - two hundred grams;

- white currant - two hundred grams.

First, mix the dough, taking flour, almonds, butter, cottage cheese, egg and a pinch of salt. Roll it out, put it in a mold and put it on the freezer for 20 minutes. Then prepare the filling: mix the sugar, vanillin, sour cream, yolks. Stir thoroughly, without whipping. This mass is poured onto the cake, pulled from the freezer, we put the currant on top and bake for 40 minutes at 180 degrees. When the resulting cake is taken from the oven, allow it to cool. Now you can eat!

It must be borne in mind that the white currant is not suitable for everyone. This berry is contraindicated for people suffering from gastritis with high acidity, as well as peptic ulcer of the duodenum and stomach.
