If you want to make thin custard pancakes, then you should use the following recipe. Half a liter of whey boils. Five eggs are beaten with a pinch of salt and two tablespoons of sugar. Then in them a thin stream of boiling liquid poured in. In this case the eggs should not curdle. Gradually, another half-liter of cold whey is added. Soda is extinguished in a small amount of vinegar, is added to the mixture, after which half a kilogram of flour is poured there. Everything is mixed. The dough is filled with vegetable oil (just a couple tablespoons). The brewed dough should turn out to be liquid, similar in consistence to vegetable oil. If the dough is dense, you can dilute it with boiled water. Such pancakes on the serum should be fried in a frying pan at medium temperature. The dishes for roasting should be greased only for the first time. Filling can be used almost any.

In addition, pancakes on the serum can be made with a mushroom filling. Half a liter of whey mixed with 2 eggs, a tablespoon of sugar, a pinch of salt and half a teaspoon of soda. The dough is beaten. Gradually, flour is added to it, but until the dough looks like a thick cream to the consistency. At the end of whipping, a glass of boiling water pours in to "brew" the dough. The resulting mixture is left for half an hour at room temperature. During this time, the filling is prepared, for which chopped boiled eggs are mixed with toasted mushrooms and grated cheese. Pancakes are baked for about 3 minutes in each frying pan, and then they are deposited for cooling. In the middle of the baking is put a little stuffing, folds the envelope, and fried on both sides or put for several minutes in the oven. Such pancakes on the serum will eventually be thin and delicate.

The following recipe does not use eggs. As a result, pancakes are obtained on soda, dense and lush. They are perfect for a liquid filling. Three and a half glasses of warm whey should be mixed with 2 glasses of flour (you may need a little more or less), salt and sugar (if you plan a sweet filling, you can put more sugar). The result should be a thick dough that drains slowly from the spoon. Here, put a teaspoon of soda and pour a couple of tablespoons of vegetable oil. The resulting mixture is left for an hour, after which pancakes are cooked on medium heat. Ready-made pastry is smeared with butter, flavored with sugar. In order that the edges do not dry, it is better to place pancakes in a plastic bag before putting them in a cold place.

Lush pancakes on the serum can be obtained if the recipe contains yeast. To do this, in the heated serum (take a liter of it), yeast is diluted with a teaspoon of sugar. The resulting liquid is left for 20 minutes. When the serum starts to foam, the dough is kneaded. In the mixture put a pinch of salt, 2 eggs, flour, the remaining sugar (3 tablespoons), vegetable oil. Flours will need so much to make the dough, like liquid sour cream. The resulting test should be brewed for about half an hour, until it doubles. Then you can start baking.

If vegetable oil is added to the dough, then the frying pan should be lubricated only the first time. For this it is more convenient to use a piece of fat, but you can use oil. Each pancake is served with a piece of butter, regardless of the future filling. If the pancakes are with a sweet filling, then they put more sugar in them, but do not be zealous, as the baking of sugar burns up. A frying pan is best to use a special, shallow, with wide edges.
