How to cook soup from smoked ribs

To prepare a dish you will need:

  • 4.5 liters of ready-made meat broth;
  • 2 cups of dry yellow pea;
  • 2 small fresh carrots;
  • 3 potato tubers;
  • 300 gr. Smoked ribs.

Prepare peas in advance: rinse, pour with warm water and leave for swelling for at least three hours. By the way, soup from smoked ribs can be cooked on broth and on water. But at the time of the pea's filling (this we do first of all) the broth should not boil, but water, on the contrary, should. Cook the peas until ready, it should be soft. You may need an hour or a half, depending on its quality. After you extract it and blend it in a blender or with a crush, put the mass back into the soup. Then potatoes cut into cubes and send to cook until soft. Ribs cut into small pieces, dip into the soup for a quarter of an hour until ready, then you need to send a pan and finely chopped carrots. If you like onions - add finely chopped and browned in vegetable oil. Soup of smoked ribs will only taste better if during cooking you put a few black peppercorns, a bay leaf and other seasonings in a saucepan. By the way, do not forget to salt. When serving a dish, sprinkle with crispy crumbs and serve with sour cream.

Bean soup with smoked ribs (pork)

This recipe is a variation of the previous one, but instead of peas we will use red beans. To prepare a large portion for the whole family, take:

  • 600 gr. Pork smoked ribs;
  • 400 gr. Red dry beans;
  • 4 potato tubers;
  • A large onion;
  • A little tomato paste, a bunch of cilantro, salt and pepper to taste.

Beans washed, so that the cooking process does not take long, you can soak it in warm water for several hours. After you put it in a saucepan, cook until cooked. Meanwhile, the pork ribs need to be chopped into pieces, put them to the ready beans, boil for about 10 minutes, then add the peeled and diced potatoes. Onion, saute on vegetable oil to a clear color, add a little, with a teaspoon, of tomato paste. Place the fry in the soup. The dish is ready when the beans and potatoes become soft. After that, it should be salted, sprinkled with pepper and finely chopped cilantro. Serve hot with sour cream, mayonnaise, crackers or just like that.
