How to Cook an Egg Benedict

Two servings will be needed:

  • Three chicken eggs (more precisely, 2 eggs and one yolk);
  • 80 grams of butter;
  • 2/3 teaspoon of lemon juice;
  • 1.5 teaspoons of water;
  • 2 slices of ham (smoked red fish or brisket);
  • Greens to taste;
  • Salt and black ground pepper;
  • Four tablespoons of vinegar.

First you need to cook Dutch sauce. It is necessary for this to mix the water, one yolk and lemon juice, and put in a water bath. It must be watched, so that the fire was not strong. Then it should be cut into cubes cold butter and one by one to throw the pieces into the mixture, stirring constantly. When one piece of oil melts, you need to add the next one and do so until it is over. Finished sauce salt and pepper to taste and leave to cool. Then you need to cook the poached egg. Bring one liter of water to a boil, add a teaspoon of salt and four teaspoons of vinegar, then make less fire to make the water boil quite a bit.
