Almond Biscuit: cooking features, recipes and types

  • Classic - it is made from flour, sugar and eggs.
  • Genoise - in the dough, add a little butter, which makes the finished cake more tender and juicy.
  • Angelic - in the recipe there are only proteins.

However, the differences in biscuits are not downloaded. If you decide to make a honey cake, then do not forget to add a little honey to the dough, if chocolate is cocoa powder. Biscuit almond, as you already guessed, it turns out, if you replace part of the usual flour with almond crumbs.

The famous confectioner, showman and TV presenter Alexander Seleznev discovered the secret of cooking an ideal biscuit. He argues that the most common mistake for inexperienced cooks is poorly beaten eggs. It would seem, what is the difficulty here? It turns out that to achieve the desired result, eggs and sugar should be heated in a water bath, and then beat with a mixer for at least ten minutes. The finished product should resemble a quality shaving foam. If you do not use this advice, then prepare to ensure that the biscuit first rises well in the oven, and then "falls."

This dessert can be used for making rolls or as a basis for a cake. The cake is very thin, elastic and delicate. That's why it bends so easily without forming cracks and creases. In addition, the ready almond biscuit does not crumble, does not soften from the cream or syrup. You can prepare it by following the recipe:

  • Whisk two chicken eggs and 50 grams of powdered sugar in a lush mass.
  • Add 50 grams of almond and 20 grams of wheat flour to the mixture. Whisk the food again.
  • Take two more eggs and divide them into squirrels and yolks. We only need the first ingredient. So whip the whites into a foam, and then gently tamper with the dough.

The finished mixture should be liquid. Pour it into the mold and bake in the oven until cooked.

We offer to prepare a delicious dessert, which can be used as a basis for a cake. This almond biscuit, whose name can be translated as "Dacian", appeared in the French city of Dax, located in the south-west of France. The recipe for its preparation can be read here:

  • To begin with, cut off the sheet of parchment, which is the same size as the pan. After that, draw a circle or square in a pencil - this will be the outline of your workpiece. Flip the sheet down and place it on the baking tray.
  • In a deep bowl, fill 100 grams of almond flour and 60 grams of powdered sugar. Add 30 grams of plain wheat flour.
  • Mix the dry ingredients with a whisk and sift through a sieve if you find the presence of lumps.
  • 160 grams of protein whisk the mixer at a low speed. Add 60 grams of powdered sugar in several receptions. To finish mixing it is necessary only when the merenga becomes stable and will get shine.
  • Put the whipped proteins on top of the dry mix, and then gently mix the ingredients with a silicone spatula.
  • Next, put the dough in a confectionery bag and lay it on a baking sheet covered with parchment. For example, you can give the cake the shape of a circle, if you lay a workpiece in a spiral.

Almond biscuit, the name of which sounds so exotic, should be sprinkled with powdered sugar and baked in a preheated oven.

Chocolate-almond biscuit

The cake, cooked according to this recipe, turns out to be soft, gentle and very flexible. That is why it is often used for making cakes or rolls. How to bake a chocolate-almond biscuit? The recipe is very simple:

  • Break into a bowl four eggs, and then use a fork to lightly mix yolks with proteins.
  • In the mixer bowl, combine 160 grams of almond flour, 130 grams of powdered sugar, 15 grams of honey and half of the egg mixture.
  • Beat products for exactly five minutes.
  • Add the remaining eggs to the bowl and stir the food for another eight minutes.
  • Separately, whisk together two proteins and 20 grams of sugar until firm peaks.
  • In almond dough, add two spoons of meringue and gently mix the foods. When the mass becomes uniform, add some more protein, and so on until they run out.
  • 20 grams of cocoa and 25 grams of flour sift through a sieve and in several receptions combine with the dough.
  • Add 30 grams of butter melted and cooled to room temperature.

Cover the parchment with parchment, and then lay a thin layer of half a dough. Align the future cake with a spatula, put it in a preheated oven and bake until ready. In the same way, prepare the second half of the test.

Cake "Tenderness"

What is the name of almond biscuit with custard? In our case, it will be a cake that can be easily prepared for an ordinary tea party or a festive table. The recipe for dessert can be read below:

  • Put in the bowl four yolks, mix them with zest of one lemon and 125 grams of ground almonds.
  • Mix six yolks with a mixer, gradually adding to them 100 grams of sugar.
  • Combine the prepared foods and add to them another 125 grams of almond flour.
  • Pour the dough into a split form and bake the cake until cooked in the oven, heated to 200 degrees.
  • To make a custard, boil 250 grams of milk in a saucepan with three tablespoons of sugar.
  • Mix the starch with two yolks.
  • Beat the prepared food with a mixer, and then put them on the fire again. Wait until the mixture boils, then remove it from the plate and cool.
  • Mix the cream with 150 grams of butter at room temperature.

Cut the cake in half, make a layer of cream, and then spread the sides and the surface of the cake. Decorate the dessert with almond flakes and grated chocolate.

Roll "To tea"

  • Mix 75 grams of chopped almond with 60 grams of powdered sugar.
  • Add to the products a chicken egg and two yolks.

  • Put in the dough half a teaspoon of soda and 60 grams of flour.
  • Lubricate the baking tray or cover it with baking paper. Pour the dough and bake it until cooked.
  • Place the hot cake on a napkin, wrap it with a roll and put it in the cold.
  • Boil 250 ml of cream and add to them 200 grams of chocolate, previously broken into pieces.
  • Separately, beat 150 g of mascarpone with a mixer, and then mix it with chocolate cream.
  • Lubricate the biscuit with the resulting cream, give it a roulette shape, wrap it in a food film and put it in the refrigerator.

After a couple of hours, you can get the dessert, cut it and serve it to the table.

Lenten roll

Biscuit almond is a wonderful treat that you can cook even in fasting. His recipe is read here:

  • Prepare the juice from one lemon and one orange, and then mix it with a pre-prepared zest.
  • Whip the prepared ingredients with a mixer, adding to them 80 grams of vegetable oil and 15 ml of wine vinegar.
  • Gradually put in the dough 100 grams of sugar, 90 grams of almond and white flour, as well as salt and a little soda.
  • Bake the cake.
  • For cream, whisk a vanilla powder mixture of vegetable fats and coconut milk.
  • Lubricate the biscuit with almond cream and roll it into a roll.
