1. Use cooled proteins (for example, those that are left after cooking home-made mayonnaise or custard). Ideally, if before creating the cream they stood in the refrigerator for 8-10 hours.

2. Replace plain table sugar with powdered sugar. You can prepare it yourself by chopping sugar in a coffee grinder. You can buy ready-made powder in the store, but it will already contain starch. Sugar powder dissolves more quickly, which significantly reduces the time spent on cooking.

3. Starch is needed to maintain the form of meringue pies. Without it, they literally after a couple of hours will be crushed and lose their original appearance.

4. Proteins will be better to beat if they are slightly salted or flavored with citric acid.

Whipping cream

1. Take a wide bowl, mixer and start whipping the squirrels.

2. Do this until the mixture turns into a cloudy foam.

3. Now enter the powdered sugar. Drizzle not all at once, but gradually, in small equal parts. Accompany it with whipping so that the shape of the cream persists.

4. When the sugar is dissolved, add the starch and beat again. At the end of the work, a cream of such consistency should be obtained, so that even if you turn the bowl over, do not leak out or deform.

1. Prepare the baking sheets: sprinkle the bottoms with flour.

2. Using a syringe or a teaspoon, form protein islands.

3. Heat the oven to 100 C. Send meringue there and leave for 2-2,5 hours. Open the cabinet door ajar.

4. Turn off the fire, but do not get cakes right away - let them sit for a while.

Serve for tea, coffee or use as a cake decoration.

1. An important point: the sugar in terms of weight should be as much as protein. 1 part of proteins = 1 part of sugar.

2. Beat the whites with a mixer at low speed. When the mass darkens, increase the power to get a thick foam.

3. Insert sugar, whisk until characteristic hard peaks appear.

4. Add lemon juice if desired. It neutralizes the excessive culpritness of the cake (if someone does not like it).

5. Prepare the chocolate powder. Carefully add it to the cream, stir so as not to disturb its airy shape.

6. Pour the cream over the molds (1/2) and send them to the microwave. Set the mode to 800 revolutions, and set the timer for 0.5 minutes. This is the time it will take for cooking.

When the time runs out, do not get them right away. Let them "sit" there for a couple of minutes. If you pull it out earlier, then "airiness" disappears. Then take out the cakes from the molds, decorate them with fresh berries or the remains of chocolate chips.
