What are hedgehogs with gravy and what do they eat?
Hedgehogs with sauce - this is usually called meatballs made of minced meat mixed with rice. Especially they are tasty, when served with a potato-mashed potatoes and watered with a fragrant, appetizing gravy. Such meatballs are an excellent alternative to meat cutlets. Each hostess prepares them in her own way and to her own taste, although basically the methods of making hedgehogs do not differ much from one another.
Here, for example, such a classic recipe for hedgehogs with gravy. For him, we need 400 g of minced beef, pork or mixed, 1 handful of long-grain rice, 2 onions, 1 carrot, 250 ml of tomato, spices and vegetable oil - to taste. To the mince we add twisted on a meat grinder one onion and raw rice. Solim-pepper to taste, mix well and roll from the resulting mass of small-sized balls, a little more than a walnut. Next, we warm up the pan in oil, fry on it finely chopped carrots and a second onion. Add tomato to them and stew them a little. It will be gravy. In the saucepan lay out our meatballs, pour gravy, throw a few grains of sweet pepper and bay leaf and add hot water until the liquid completely covers the meatballs. Cover the pan with a lid and simmer until rice reaches the ready state. In ready-made meatballs, he will stick out of minced meat, resembling a needle. We lay out our hedgehogs with gravy on a plate and serve it to the table.
There is another way of cooking. In this case, we will need a half kilogram of minced meat, two onions, two eggs, 150 grams of long rice and spices. Rice should be boiled until half-ready and cooled. Onion twisted in a meat grinder. Add half cooked rice, onions, raw eggs, spices to the stuffing and mix everything well. We roll out the received mass identical balls - future hedgehogs. With gravy, too, everything is simple, for it we will need two large carrots, two onions, two tablespoons of flour, 200 g of cream 30%, a tablespoon of tomato paste, 1.2 liters of boiled water, spices and dried herbs - to taste. We cut our onions with half rings, carrot three on a large grater. We put them in a deep frying pan or stewpot with preheated oil and fry a little. Next, pour in the flour, add the tomato, and fry a little. Continuing to stir, add water and cream. After all this boils, carefully put there meatballs, add salt, pepper and other spices that you like, and cook. After 30 minutes hedgehogs and gravy will be completely ready.
But meatballs can be replaced with cutlets, which also come with gravy. For example, 400 grams of pork mince, one onion, a small slice of white bread, 100 ml of milk or cream, three tablespoons of flour and the same amount of vegetable oil, one egg, salt and pepper to taste, will be needed for such pork cutlets. Bread is put in milk or cream so that it is slightly fragile. Onions we spin on a meat grinder. We squeeze the bread and put it into minced meat along with onions, salt-pepper, there we break the testicle and mix it well. We make standard shape cutlets, roll them in harvested flour and fry in oil on both sides. In parallel with the fried chops we prepare the gravy, for which you will need: 1 tablespoon of flour, preferably wheat, one tablespoon of butter, 100 ml of milk or cream, two tablespoons of tomato paste, ½ teaspoon of salt. In a sauté pan or a deep frying pan, melt the butter and fry the flour on it, into which the salt is already mixed. Here we put the tomato paste, mix it. Pour in milk or cream (use those in which the bread was soaked, and if not enough, you can add a little hot water). In consistency, this should resemble sauce. When the gravy is ready, put into it fried cutlets and simmer on low heat for ten minutes. Ready cutlets from minced meat and gravy serve to mashed potatoes or pasta.
