Vegetable casserole "South": a recipe for a truly summer dish

Vegetable casserole "South" is a simple and tasty dish that you can prepare for lunch or dinner. Thanks to the fact that the ingredients used are cheap and available all year round, you can please your family with a dish with this summer name regardless of the season.

Casserole "Southern": recipe classic

You will need:

  • 1 medium-sized zucchini;
  • 3 pieces each. Tomatoes and potato tubers;
  • 3 tbsp. L. Ordinary butter;
  • 2-3 tbsp. L. Milk and as much wheat flour;
  • Egg, a sufficient amount of cheese for sprinkling (gram 100-150), spices and salt.

Peel the vegetables and cut into thin slices or slices. Prepare a baking dish - oil it with vegetable oil, then put vegetables on the bottom, it will turn out nicely if the slices are overlapped. Salt and taste spices - a mixture of herbs or simply black pepper. Cook a special sauce: fry in a butter until light golden color the indicated amount of flour, pour in the milk and cook until thick. Remove the dishes from the fire, cool a bit, beat the chicken egg in the sauce and stir well with a whisk, salt. Pour the vegetables with the resulting mass, and sprinkle a sufficient amount of grated hard cheese on top. Vegetable casserole "South" will be ready in half an hour at an oven temperature of 180-200 degrees. Serve it hot, serving separately sour cream or natural yogurt, as well as slicing fresh vegetables or a light green salad.

Vegetable casserole "South": recipe with minced meat

Of course, tomatoes and zucchini are wonderful ingredients for a light dinner, but here the male half of the family prefers more solid dishes - with meat. We suggest you combine the benefits of vegetables and the nutrition of minced meat. For a large portion for the whole family, prepare:

  • 2 kg of potatoes, zucchini, eggplants, peppers, carrots, etc. - you can take any vegetables that you have in the refrigerator (except, perhaps, beets);
  • 500-700 gr. Mincemeat - the best choice is a mixture of beef and pork, but any other;
  • 2 onion bulbs;
  • 2/3 cups of milk, 2 eggs, 5-6 tablespoons. Butter and as much flour;
  • Cheese - 200 gr., And it is possible and more, spices, salt, and also any seasoning to taste.

Vegetable casserole "South" with meat is prepared almost the same way as the previous recipe. First chop the onions finely or chop it in a blender or meat grinder. Add to the stuffing, salt, sprinkle with spices and mix well. Meat mass fry in vegetable oil, it should be almost ready. Select the vegetables that you want to cut, preferably cut into slices or plates. Cook the sauce for pouring as described in the previous recipe: first brown the flour, pour in the milk and stir until the liquid thickens. Stuff the eggs and salt. On the prepared baking sheet lay half the vegetables, spread the minced meat evenly, and then cover with a second layer of potatoes, zucchini, tomatoes, etc. Pour sauce and sprinkle with plenty of cheese - the more it is, the vegetable casserole "South" will get tastier. Who does not like a little crispy, golden crust! Place the baking tray in the oven and bake for half an hour or forty minutes at medium temperature. To serve it is necessary, of course, hot, it is better together with sour cream and fresh vegetables. Believe me, no man, even the smallest (every mother knows how difficult it is sometimes to convince children to eat healthy vegetables) will not give up a fragrant meat treat under an appetizing crust.
