Traditional home-made lecho and its original variations

Lecho is an international winter harvest. They prepare it not only in our country, but also in many foreign countries. The main component of this dish is sweet Bulgarian pepper. Do not forget that any home-made lecho can be made spicy or sweet, adding the appropriate spices. Also, not all the housewives know that this dish can not only be closed for the winter, but also served on the table immediately after cooking. Moreover, many people like to eat lecho not in a cold, but in a warm form.

Preparation of lecho: general recommendations

If you are going to use a homemade lecho recipe for winter preparation, take care of the dishes beforehand. To store this salad, small cans (0,5-1 l) and lids that can easily be pasteurized will suit. Do not forget that not every ready lecho can be stored at room temperature. Read carefully the description of the recipes, but still if possible, closed salad for the winter is best stored in the cellar or refrigerator. Almost any home-made lecho recipe involves cutting all vegetables in small pieces. If you want, you can cut the peppers large, and from other ingredients prepare a thick sauce. Perhaps someone will decide what lecho is uncomfortable, but it looks much more impressive on the table. You can also use pepper of different varieties. Do not forget that it happens not only red, yellow or green, but also unusual purple hues.

Traditional lecho at home: recipe and step by step instruction

Take half a kilo of Bulgarian pepper and as many ripe tomatoes, 6 medium sized bulbs, garlic and spices to taste. Peppers and onions are cut by hand, and tomatoes are ground with a blender. At the bottom of the pan, in which we will cook lecho, we pour sunflower oil, now we place the crushed vegetables there and set it on moderate fire. At the same stage, you need to add two tablespoons of vinegar, spices, salt and a pinch of sugar to taste. Cook, stirring, 60 minutes, in the end add crushed garlic. Slices of pepper in a correctly cooked lecho should gently crackle when chewing. Over time, you yourself will understand how much it should be cooked. Ready salad in a warm form is laid out on the banks and rolled up, then left to cool.

Lecho: recipe with cucumber

Where to put overripe cucumbers - a question that is relevant for many summer residents. There is a home-made lecho recipe, in which you can add them. About 5 kg of cucumbers, 3 kg of tomatoes, 1 kg of Bulgarian pepper, a glass of vinegar, a glass of sugar and a half glass of sunflower oil will be needed for this winter preparation. Using a meat grinder, chop the peppercorns and tomatoes, mix the mass with the vinegar and butter, add the sugar and put on a slow heat for a quarter of an hour. During this time we prepare cucumbers: we clean and cut into semicircular slices. Add them to lecho, at the same stage you can introduce spices and salt. Cook for at least 15 minutes, but not more than half an hour. A few minutes before turning off, add the garlic, crushed with a special press. Heat lecho distribute to the banks and close for the winter.
