Cooking is a complex science, in which, along with strict rules, there are many different departures from them. One of the most striking examples of such a case is dumplings with potatoes. This dish is already contradictory in its name. Despite this, there are a huge number of different recipes for its preparation.

The simplest version

Sometimes mistresses confuse two completely different dishes: pelmeni and vareniki. These products differ among themselves on several grounds:

  1. Type of test. For dumplings, it must necessarily be insipid.
  2. Ingredients of the filling. In the first case it is chopped meat or fish. All other options are related to vareniki. The main feature of the filling for dumplings is that it should not be sweet.
  3. The state of the filling. For the dumplings the mixture is prepared. In dumplings stuffing is always raw.
  4. The shape of the product. Dumplings are usually made round. Although other options are known.

Violating one of these signs, you can get a product that for the rest of the indicators retains its belonging to one or another kind. Take, for example, dumplings with potatoes.

The simplest version of their preparation provides for the following formulation.

For the test: 0.3 kg of flour, salt, 2 eggs, 5 grams of vegetable oil and 70 milliliters of water.

For the filling: 8 potatoes, salt, 6 onions and ground pepper.

Prepared dumplings with potatoes as follows:

  1. First you need to make a dough. To do this, in a deep bowl, you must carefully mix all the ingredients. At the first stage you can use a mixer, and then with your hands to make a final trick.
  2. For filling, vegetables should first be cleaned, washed, and then chopped using a knife or modern choppers. After that, you can add the rest of the ingredients to your taste.
  3. Dough roll out, and then using a mold or a conventional glass cut out of it neat round billets.
  4. For each piece put some of the filling and gently tear the edges.

After that, you will only have to cook the finished dumplings in boiling water with the addition of salt. This may take 7-8 minutes.

Mixed Filling

Considering the fact that there should be meat inside the meat dumplings, you can prepare products with a mixed filling. In fact, in this case, only one of the distinguishing features of this product is violated. As a result, delicious dumplings with potatoes and minced meat are obtained. The vegetable component here will be only a small addition. To prepare such pelmenoks you will need:

800 grams of flour, 0.5 kilograms of minced meat, egg, 300 milliliters of water, 1 potato, salt, 5 onions and vegetable oil.

Cooking meat-potato dumplings is easy:

  1. First you can tackle the stuffing. To do this, you need to scroll vegetables (onions and potatoes) in the meat grinder, and then add them to the meat along with the salt.
  2. For the test, first thing you need to whip the egg with water and 2 tablespoons of butter. Then, gradually adding flour, make the final kneading. The dough should not stick to the hands.
  3. To make dumplings, you can use a special form for modeling. After this, it is necessary to separate the piece from the test and roll it into a layer no more than 3 millimeters thick.
  4. Cover them with a shape and press them tightly to slightly fell into the holes.
  5. Form the voids filled with the prepared mixture, and then cover the mold with another same layer and roll it from above with a rolling pin. As a result, ready-made dumplings can be separated.

After that they will just be cooked. For a greater flavor in the water, in addition to salt, you can put a laurel leaf.

Dumplings in Belarusian

From time immemorial dumplings were considered a Russian dish. Over time, in national cuisines of other countries, they appeared adapted in accordance with local taste preferences. For example, Belarusians have their own dumplings with potatoes, the recipe of which differs somewhat from the usual variant. To prepare them, you need to take:

For the test: for 170 milliliters of water - 3 glasses of flour, 1 egg, salt and 15-20 grams of vegetable oil.

For the filling: 450 grams of potatoes, a teaspoon of salt, two onions, 100 grams of soft cheese and 35 grams of vegetable oil.

The technology of the process in this case will be somewhat different:

  1. To prepare the dough in a bowl with salted water, first you need to break the egg, and then add the butter, and it's all good to beat.
  2. Flour pour on the table, make a small cavity in it and pour the mixture into it. The dough should be kneaded until it stops sticking to the hands.
  3. Potatoes for the filling must first be boiled, and then, draining the water, mash it in a mash.
  4. Bow randomly crumble and lightly fry in a pan.
  5. Combine the products by adding the remaining ingredients.
  6. Cut the dough into pieces, and then roll each part in the form of a small round cake.
  7. Put in the center of each of them a part of the filling and, having clipped the edges, connect the ends in the form of a crescent.

After boiling in salty water, the finished products should be caught with a noise and served to a table with butter.

The main stages of the process

In fact, dumplings are lean dumplings stuffed at the discretion of the hostess. True, it sometimes does not match the name of the dish. For example, there are dumplings with potatoes. The step-by-step recipe with a photo allows you to better examine all the stages of the process and notice a fundamental similarity with the standard version. For such a dish you will need:

400 grams of potatoes - 350 grams of flour, 2 onions, 5 grams of salt, a quarter teaspoon of black pepper, 8 grams of dill, 100 grams of carrots, and 30 milliliters of olive oil and 40 milliliters of any other vegetable oil.

The whole process consists of several consecutive steps:

  1. To make dough, flour should be mixed with salt, and then, adding 150 milliliters of warm water, knead the steep dough.
  2. To increase the elasticity, it should be put for 50 minutes in a plastic bag.
  3. Peel potatoes in slightly salted water.
  4. Chop the onions arbitrarily, and to grind carrots it is better to use a small grater.
  5. After that, the products should be lightly fried in olive oil.
  6. Stir the potatoes in any convenient way. In the received weight to add vegetable oil, two thirds of the pasted vegetables and other ingredients.
  7. Dough roll out in the form of an even layer, after which cut out the circles with a conventional glass.
  8. Fill each blank with stuffing and fix the joints.

The original way

How else to cook dumplings with potatoes? The recipe in pots is good because the product is immediately ready for use. However, before this, each of the used semi-finished products must be made using the following set of products:

For the test: for 150 milliliters of water - 3 cups of flour, 10 grams of salt and 1 egg.

For the filling: 7 potatoes, salt, 100 grams of dried mushrooms, 2 onions and 35 grams of vegetable oil.

For sauce: a glass of sour cream - 10 grams of flour, as well as a tablespoon of butter and tomato paste.

In addition, in the pot you need to add 50 grams of grated cheese and the same amount of creamy butter.

Everything is prepared very quickly:

  1. First of the prepared ingredients you need to knead the dough, and then, covering it with a towel, leave it for 40 minutes.
  2. For the filling, the mushrooms must first be soaked, then boiled in salt water, cut and fried with chopped onions in a pan.
  3. For sauce, the flour must be mixed with the rest of the ingredients and blown out a little.
  4. Roll the dough into a bundle, split it into pieces.
  5. On each of them put a little stuffing and arbitrarily fix the edges.
  6. Ready dumplings should be put in boiling water and wait until they come up.
  7. Put butter on the bottom of the pot. After that, pour the dumplings into it, pour the sauce over them and sprinkle with grated cheese on top.

Next, the pot must be sent to the oven for 15-25 minutes, setting it pre-temperature of 185 degrees.

Complicated filling

To taste the dumplings were more tender and fragrant, for them you can make a special filling. It will require: for 600 grams of potatoes - 1 egg, 5 grams of salt, 20 grams of butter, 1 gram of ground pepper, 2 onions and 50 milliliters of whole milk.

The components of the test are taken as standard: 500 grams of flour, a glass of water, 2 eggs and 10 grams of salt.

How are these dumplings made with potatoes? The recipe step by step with this set of products will be slightly different from the previous options:

  1. First potatoes must be washed, cleaned, and then boiled, pouring a little water. This will take about 25 minutes.
  2. Finely chop onion and fry in butter.
  3. Stir the potatoes in a puree and, adding the remaining ingredients, prepare a soft stuffing.
  4. Add the flour to the bowl in a bowl, add the eggs and salt, and then, topping up the water, prepare a steep dough. Before cutting, he should give 30 minutes to stand with a covered napkin.
