Mascarpone. What is it, and with what it is eaten?

The famous Italian cream cheese is mascarpone. What it is? This is a rather fatty mixture of a soft consistency, which has a tender taste and is perfectly combined with many products. In particular, it is used as a sandwich mix. However, not bread-smeared bread for breakfast has glorified this product. Tiramisu is the most famous and popular dish, which is attributed to desserts and in which this cheese is found. But we will not dwell only on sweets, we will consider other uses of the Italian delicacy.

Dishes with mascarpone

This ingredient is made from buffalo milk, which is why it has an unusual taste and high fat content. But back to cooking and start in order.

Soup

Mascarpone (what it is, we already looked at) is great for creamy first courses. Here's one of them. A kilogram of cherry tomatoes should be laid on a baking tray, sprinkled with olive oil and balsamic vinegar. Add fragrant herbs and bake until done at 240 degrees (peel better pre-pierce). On the fire, heat 2.5 cups of broth (can be meat or vegetable), put tomatoes in it and blend with a blender. Introduce a glass of mascarpone and gently stir, for taste, cut to serve basil. All is ready.

Second course

There are a lot of similar treats, it's not only meat delicacies, but also risotto, pasta, and even pancakes with vegetables and mascarpone. What is it, tell each experienced chef, who has repeatedly experimented with the tastes of various dishes. You can cook tasty chicken pockets. Cut two poultry fillets in half (we will get 4 servings as a result) to make incisions in each piece. Shred carrots and onions, fry in a saucepan with a thick bottom, bring in a little garlic and chopped celery. As soon as the mixture turns golden, put the peeled shrimp and stew for a couple of minutes under the lid. Half blend the mixture with a blender, put a little parsley, a handful of breadcrumbs, fill it with a mixture of pockets in the fillet and close with toothpicks. They can be rolled in eggs and bread, or you can simply fry in vegetable oil until cooked. Pour a glass of dry wine and put five tablespoons of cream cheese (in our case - mascarpone), shift the second part of the mass to the chicken and cook for 15-20 minutes with the addition of fragrant herbs, for example saffron. There also often add tomato paste, but this is optional. You can serve chicken with rice or boiled potatoes, or you can simply make an original vegetable salad and offer such a useful and delicious dinner to the household.

Desserts with mascarpone cheese

  1. A very simple recipe for a delicious cream for coffee or fruit. Combine the powdered sugar, cream and cheese mass, whisk well. You can serve.
  2. Ice cream. Beat with egg yolks (3 eggs and a glass of sugar), combine with mascarpone and spoon of cognac. Dilute the mass with half a glass of milk and put in the freezer. After an hour, beat the mixture with a blender and return it to the chamber. After a lapse of 60 minutes, repeat the procedure and leave the ice cream for three hours to harden. For filing, I use fruit or cream, the recipe of which is described above.

Mascarpone - what is it? It is an amazingly tasty and delicious product, perfectly suitable for dishes, which they want to surprise and amaze. As an afterword I want to offer a simple, but a real Italian recipe. Slice a thin slice of white bread in a dry frying pan on both sides, spread the cream cheese, lay a few pieces of tomatoes and basil on top (you can take sun-dried tomatoes, it will also be very tasty). Brew a cup of tea or coffee and enjoy an Italian breakfast.
