How to make delicious dough for kefir pies

Patties are an excellent choice for a delicious Sunday lunch for the whole family and excellent food for unexpected guests. For the preparation of this type of baking, almost every landlady has its own recipes and preferences. You can experiment for a long time with fillings, bake patties in the oven or fry in a pan, use a yeast or puff pastry. Many housewives liked the dough for patties on kefir. In contrast to yeast, the preparation of such a test does not take much time, applying it, you can quickly prepare the necessary amount of pies.

Filling for pies is a topic for a separate conversation, too many of their varieties exist, but a dough for kefir pies can be prepared in only a few ways, combining different ingredients.

The simplest recipe for kefir contains only flour and kefir in a ratio of 1: 2, that is, 0.5 liters. Kefir will need a kilogram of flour. The flour in this dough is better to take pancake, to taste, you can add a little salt or sugar in the dough. From kefir with flour knead the dough, if it turns out very soft, you need to add flour. Divide the dough so that the pieces are approximately the same, knead or roll out a little and add the filling. Fry the patties in a frying pan in vegetable oil.

More ingredients contain another dough for kefir patties, which can be called universal for products with any fillings. For its preparation for 500 gr. Kefir also takes 1 kilogram of flour, as in the previous recipe, but in addition two eggs are added, 2-3 st. L. Vegetable oil, just a little bit of hydrated soda, a little sugar and salt. This dough will be more dense and elastic, with frying you get a very lush white crumb. It perfectly combines all possible types of fillings and stuffing - apples, mashed potatoes, jam, onions with eggs, sausages, minced meat, rice, liver, but still it's ideal for pirozhki with cabbage. These and other patties are best fried in vegetable oil, but if desired, you can bake in the oven, then the surface of the patties will need to be smeared with a beaten egg.

At will, you can slightly modify this recipe and prepare a very delicate dough for patties on kefir. For the test, you need one egg, one glass of kefir, about two glasses of flour, a little soda (1/2 tsp), salt and sugar to taste. First you need to beat the egg with sugar, then mix all the ingredients, except flour. Add the flour in the last turn very carefully for one tablespoon, constantly stirring the dough. It should look like a cottage cheese mass or dough, like a very thick pancake, do not add a lot of flour - it needs just enough to properly form pies.

Then you should sprinkle the table with a thick layer of flour, spread the portions of the dough on your palm-sprinkled palm with a spoon dipped in water. Slightly flatten and put the filling. Remember that when cooking pies almost double in size, so do not regret the filling. Protect the edges and lay on a flour-strewn table, after a few minutes they can be sent to a pan. Such pies differ in that they contain much less flour than traditional ones, and therefore they do not stale longer and remain fresh.

Delicious juicy and hearty baking can be obtained if you use dough for white on yogurt. In order to prepare such a dough, you need 0.5 liters of kefir and one kilogram of flour to take one egg, 2-3 tablespoons of sugar, a little salt, and the main difference from the pastry dough is yeast. To make a dough 10 gr. Dry or 30 gr. Live yeast diluted in 5-10 ml. Warm water or milk, after a few minutes, when yeast foam is formed, mix all the remaining ingredients. When the dough stops pestering, then it's ready. This dough should not be too steep. Set aside for an hour in a warm place, then it will grow faster. Put on thinly rolled dough pieces prepared forcemeat and tie them, giving the shape of belaya. Fry for a few minutes on hot oil. If you make small belyashi with a very thick layer of dough, then it will be good to bake them only in the oven.
