Hearty and delicious dishes of lentils

Today you can buy lentils brown, green and red. Each variety has its own characteristics. Choosing green or brown, know that such lentils are characterized by nutty taste and that it keeps shape well during heat treatment. It can be prepared as a side dish for pork or bacon, it is good in vegetable dishes and curry. Red lentils have a spicy taste and are quickly boiled, so it is better to use it in soups and for such a dish of lentils as mashed potatoes.

In order to prepare the lentils for heat treatment, it does not need to be soaked, but it still costs to remove pebbles and other rubbish. Lentils absorb a lot of water, so when cooking dishes from it, always monitor the amount of water in the pan.

Lentil Dishes: Salad

Green lentils (330 g) boil in chicken broth, at the same time throwing in a pan a couple of cloves of garlic, 4 feathers of green onions (chopped), a piece of butter. Brew as much broth as necessary to completely cover the rump. After the lentils are ready, drain the water (if it is left) and refrigerate. Serve the beans with red wine vinegar (spoon), olive oil (2 tablespoons) and mix with chopped baked bell pepper and a handful of crumbled cheese or feta cheese. This dish should be served with a rocket salad or any other leaf salad.

Lentil Dishes: soup

Red lentils (300 g) fill with chicken broth in a ratio of 1: 3. Also throw into a saucepan finely chopped onions and garlic cloves. Bring to a boil, chop the lentil into a blender and return to the pan. Add to the soup-puree a little fried bacon, a spoonful of sour cream and a very slightly chopped hot chili pepper. Add salt. Bring again to a boil, remove from heat and you can serve the soup to the table, seasoning with fresh herbs.

Hot dishes from lentils

1. Sausages with lentils. Sausages (6 pieces) and strips of bacon (4 pieces) fry in a deep frying pan until brownish. Add lentils, a can of beef consomme in canned pots and mix. After boiling, cook the dish for another 30 minutes, that is, until the cereals are ready. At the very end of the cooking, put into the lentils a table spoon of cream and the same amount of jelly from the red currant. Garnish can be served with mashed potatoes.

2. Stewed ham with a lentil. Punch the ham (1.5 kg) with water and bring to a boil. Drain the water, pour a new one and bring it back to the boil. Then cook the meat for another half hour, then add the lentils (300 g), finely chopped carrots (2 pieces), chopped celery (2 sticks), laurel, thyme (one twig), shallots (8 bulbs) to the pan. Dish cook for about an hour, and in the end add a tablespoon of sour cream, salt, pepper.

3. Cod with lentils. Green lentils (225 g) boil in chicken broth (450 ml) with the addition of a laurel for half an hour, that is, until the softness of the legumes. Add the finely chopped parsley to the prepared dish. In the oven, bake the cod fillets (4 slices) for 20 minutes at 200 degrees. Lentils spread on plates, from above lay out a fish and be sprinkled with a mixture of olive oil and lemon juice.

Vegetarian dish of lentils: lentils with champignons

Rinse the rump (1 glass), put in a pan and pour water (3 glasses). Bring to a boil, reduce the heat to a minimum, salt and cook for another 20-25 minutes until the legumes become soft. Periodically remove the resulting foam. A couple of onions and a couple of cloves of garlic finely chopped, carrots (2 pieces) on grater grate. Champignons (300 g) thinly cut into plates. In a heated frying pan and butter, fry the onions with garlic for a couple of minutes, then the carrots, and after another 3 minutes add the mushrooms. After 8-10 minutes, when the champignons will be brought to the ready, pour lentils and finely chopped fresh herbs into the pan. Pepper, mix everything thoroughly, and remove from heat.
