Bozbash. Traditional Recipe

To make soup on mutton broth, a half kilogram of meat, 50 grams of fat (by the way, too, mutton), 2 liters of ordinary, pure water, green peas (400 g), half a kilogram of potatoes, 400 grams of apples, the same onions, 150 grams of tomatoes, Sprigs of parsley, chili and salt. Lamb is cut into small pieces, which are necessarily fried in fat directly in a saucepan, where soup will be cooked. The meat is poured into water and brought to a boil. After removing the foam, on a low fire the broth is continued to cook for 40 minutes.

In a separate saucepan, green peas are brewed , which is then wiped through a sieve. Puree is added to the mutton broth. Onions are very finely shredded and are fattened. As soon as he gets flushed, he is also sent to the soup.

Kfta-Bozbash

This dish is a beef soup made from beef. To make it, you need to take half a kilogram of meat, a bulb, an egg, a little rice and peas (literally a handful), potatoes, tomato paste, cherry plum and mint (better dried). Peas should be soaked for the whole night, and before cooking soup it should be cooked.

Separately, meat and onions are passed through the meat grinder. In the minced meat, add the egg and add mint, rice, salt and pepper. From this mass make small balls-meatballs. Plait in each ball put plum. This meat product is put in boiling water and boiled for an hour, gradually removing the foam. Then potatoes are added there. A tomato paste gets there almost before the end of the preparation of soup bozbash. The recipe recommends adding a little dried mint for flavor before serving.

Another recipe for the original and unusual soup. It is cooked again from lamb. You need half a kilogram of tenderloin, 2 bulbs, eggplant, string beans, bambino, potatoes and tomatoes.
