"Grandma's" pie: recipe for cooking

Almost everyone who lived with his grandmother as a child or went to visit her will surely agree that the taste of grandmother's pies is remembered for life. Perhaps this is because everything related to childhood, a person seems to be better, sweeter and more attractive, and maybe the reason in the culinary experience of representatives of the older generation that comes with age. Be that as it may, today there are even several types of baking, which is directly called - "Grandma's Pie". They are prepared with different fillings and can become an excellent treat to tea or coffee.

Pie "Grandmother's napkin" with poppy seeds

A real culinary masterpiece can be prepared by using the following recipe. It is called "Babushkina napkin" and is prepared with a filling from poppies.

To prepare you will need:

  • A tablespoon of good butter (melted);
  • 1 tbsp. L. Yeast (30 g fresh or dry);
  • Vanilla sugar ;
  • 2 eggs (1 egg yolk for coating);
  • 1 cup of boiled water or warmed milk;
  • ½ cup poppy seed and sugar;
  • 0.5 kg of flour;
  • salt.

How to cook a traditional "grandma's" pie with poppy seeds

To get a tasty and beautiful pastry you need:

  • Yeast pour into a bowl with slightly warmed milk and stir;
  • Add ½ item. L. Sugar and vegetable oil;
  • In a larger bowl, pour a little boiling water and put a bowl in it for 20 minutes;
  • Seeds of the poppy seeds, rinse, pour 1/2 cup of water and boil until the liquid completely evaporates;
  • Sift flour, mix with dissolved yeast, pour butter into the dough;
  • Vigorously knead the dough for at least 10 minutes, put it in a deep pan, put it in a heated and turned off oven, have a heating battery, etc., and let it go up;
  • The finished dough needs to be divided into 2 parts, since from such quantity 2 pies are obtained;
  • Roll out the first part of the test with a layer of 1.5 cm;
  • Lay out on the layer poppy filling, sprinkle half the sugar mixed with the contents of the "vanilla" bag;

  • Gently roll the dough into a roll;
  • Cut off at each end one piece each 1 cm thick.
  • Oil the form and sprinkle with flour or breadcrumbs;

  • Lay the roll into a form, folded into a ring;
  • With a sharp knife from the outside to make deep incisions at a distance of 1.5 cm;

  • Beat the yolk and smear the surface of the cake with a pastry brush;
  • Put in the oven, heated to 170 degrees;
  • After 20 minutes turn off the oven, wait a quarter of an hour and take out the finished pie.

Dry fillings

The recipe for the "Grandmother's napkin" cake has several varieties, with different fillings. For example, instead of poppy, you can take a nut, which is prepared as follows:

  • 2 tbsp. L. Sugar mixed with 4 tbsp. L. Melkonarublennyh kernels of walnuts;
  • Add a little vanilla sugar, cardamom or cinnamon powder;
  • Pour in 2 tsp. Cognac;
  • All mixed up.

A delicious "grandmother's" pie will come out with coconut filling. For its preparation you need to take 2 tbsp. L. Coconut shavings and sugar and mix. You can also just sprinkle a layer of dough.

Grandmother's pie: recipe with apples

For such a fragrant and easy-to-use baking you will need:

  • 150 g of butter (pre-melt);

Few know that in some provinces of Russia 100 years ago there was a custom to invite godmothers to their son or daughter, sending sweet baked goods as a present. Most often it was "grandmother's pie with jam", which was prepared from such ingredients:

  • 3 eggs;
  • 200 g of sugar;
  • 1 tsp. Soda;
  • 250 g of butter;
  • Vinegar (1/2 tbsp.);
  • yolk;
  • 200 grams of jam (preferably with sour, for example, cherry, but without pits);

The recipe for the pie "from the grandmother" with cottage cheese

Delicious pastries will be obtained if you take:

  • 1/2 kg of fat cottage cheese;
  • Salt (to taste, you can not put);
  • 4 eggs;
  • 2 tbsp. Flour;
  • 160 g confectionery margarine;
  • A quarter of a l. Soda;
  • 1 tbsp. Sahara.

Procedure:

  • Freeze the oil;
  • Sift flour;

Ancient "great-grandmother's" recipe

In one of the well-known culinary books in Russian, which is more than 150 years old, a recipe for a sweet pie with raspberries was preserved . He rightly can be called "great-grandmother", since he was trained in Russia at least since the 18th century.

For him you need:

  • 6 g dry yeast dissolve in 1.5 tbsp. Warm water;
  • Pour in 2 tbsp. Flour, mix and wait for about 4 hours;
  • Pour a pinch of salt into the dough and beat it carefully with a wooden spatula for 10 minutes;

  • Roll the rest of the dough into a thin layer, cut out the strips and decorate the grid with a pie;
  • Put the pie in a preheated oven for half an hour, pre-lubricated with a saturated solution of honey (honey dissolve in boiled and slightly chilled water).
