Rassolnik with kidneys

"Soup with cucumbers" is especially delicious if you cook it on a meat broth. Classical rassolnik with pearl barley, the recipe recommends cooking on beef kidneys. First, a subproduct is prepared: take a half kilo of kidneys, wash them well, remove fat, clean them of film, cut into small pieces, put them in cold water and weld. Then the first water is drained (to be completely cleared of bitterness), the kidneys are washed again, they are again filled with cold water and are already set for cooking for an hour and a half. The scum is removed.

Separately, you need to put pre-cooked (in the evening) soaked croup - about a glass. Necessarily for the smell and rich taste in this rassolnik with pearl barley (it is desirable to keep the recipe in terms of ingredients, although it is possible to supplement with other products) put roots, carrots. While they are brought to the condition of the kidney and croup, chop the stalk and celery root, 2 parsley root, onion and fry in vegetable oil. If you like soups with carrots, add it, wiping it on a grater or cutting into strips.

When the broth from buds is ready, we begin to place the ingredients in our pickle with a pearl barley. The recipe advises to remove the kidneys, drain the liquid. 3-4 pickled cucumbers cut into cubes or small slices, just do with 4 peeled potatoes. All this must be put in a roast from onions with roots, pour broth and put on medium fire for half an hour. To get a sharp and sour rassolnik with pearl barley, the recipe dictates to pour in a little cucumber pickle, only to make it boil. On the table, the dish is served as follows: in each plate are placed a few pieces of kidneys, the soup is poured, a spoonful of sour cream is added. It would be nice if the soup was a little peppery - it adds piquancy to it. Be sure to crumble the greens!

Rassolnik on fish broth

We offer one more interesting recipe for pickling with pearl barley - with fish balls. Someone he might seem to be an amateur, but one who appreciates a good kitchen will definitely approve it. First, put the cooked, well-washed and prepared fish cooked (about a half a kilogram or more), preferably a small-boned, rather fatty, so that the broth turns out to be rich. A glass of pearl barley pour boiling water (about a glass with a quarter or a little more) and leave it to swell in a water bath. Then, when the fish is welded, the liquid is filtered, the croup is transferred and is cooked on a small fire. Separately, you need to sliced vegetables with vegetable oil: 1 medium carrot, parsley root, stalk of leek.

The recipe for pickle and pearl barley includes spices, seasonings, which are laid in soup at the last stage of cooking. In the welded pearl barley, add a roast, sliced 3-4 potatoes and as many pickled cucumbers, chopped cubes, as well as salt to taste. Let the dish leave, and for 6-7 minutes before removing the pot from the fire, throw the meatballs. For minced meat, you need a fish fillet (250 grams), 60 g of crumb of white bread soaked in milk, and a spoon (dining room) of butter. Stir the minced meat thoroughly, add salt, pepper and spices, form small balls and gently dip into the soup. If desired, add brine to the dish. Served soup with chopped greens.
