Ear from pikeperch
The pike perch is a very tasty, rich and appetizing dish. But why pike perch? Just because the broth from this fish turns fat, which means that the soup from the pike perch will smell nice. Yes, and this type of fish is not so expensive, you do not have to spend too much money to pamper yourself with a delicious soup.
But the next recipe is not just called "royal ear", you have to go to the costs of not only time. But the result is worth it!
Ear from pike perch
Ingredients for soup:
- a kilogram of chicken;
- half a kilo of pike perch;
- 4 potatoes;
- two carrots;
- three onions;
- one pepper and a tomato;
- two tablespoons of oil;
- 50 grams of vodka;
- pepper, salt and greens.
Ingredients for pancakes:
- a glass of flour;
- half a mill of milk;
- one egg;
- two tablespoons vegetable oil;
- Two yolks.
Ingredients for filling:
- 150 grams of boiled chicken;
- 150 grams of boiled fish fillets;
- one onion;
- two tablespoons of oil;
- one egg.
Preparation:
So, how is the ear prepared from the pike perch.
Wash the chicken, put it in a saucepan, pour at least three liters of water and put it on the fire. As water boils, reduce the heat a little, remove all the foam with a noise, add salt and cook until cooked. When the chicken is completely ready, remove it from the pan.
At this time, peel the pike perch: remove the insides and scales. Cut off the tail, head and fins of the fish. All this carefully wash and put in already boiled chicken broth. Bring it to a boil and cook for another 15 minutes until the fish is completely cooked. Strain the broth through a fine sieve or a couple of layers of gauze.
Cut the fillet of pike-perch with pieces about 3 centimeters thick. Add them to the already filtered broth. Bring it to a boil, remove all the foam, add as much salt as you want and cook until the fish is ready. And this is not less than 15 minutes. After that, take out pieces of fish from the broth.
Brush one onion and one carrot, cut both vegetables into small pieces. In a separate bowl, whisk the squirrels, add vegetables to them and pour the resulting mass into the broth. Put the saucepan on a small fire and cook for about 40 minutes. All these actions are necessary to ensure that the protein absorbs all the turbidity and makes the broth completely transparent.
Now, once more, strain the broth. Vegetables and protein simply discarded. Those carrots and onions that you have left, clean and cut into thin strips. Wash the tomato and cut it into slices of small size. Wash the Bulgarian pepper and just cut it, just straws.
Heat the butter in a frying pan, fry the carrots and onions on it until golden color is obtained. Add the pepper and tomato to the vegetables, simmer for another 10 minutes.
Peel the potatoes, slice them with slices and boil (only in a separate pan) until half-ready. In a clean pot, put the potatoes, pieces of pike perch, fried vegetables. Just do not forget to leave some pieces of fish. They you will start pancakes. Pour all ingredients with broth, add vodka, pepper, salt and bay leaf. Put the pan on a strong fire and bring to a boil, but do not need to boil. Pull out the bay leaf, cover and let it brew. In fact, the ear from the pike perch is ready, but we'll go ahead and use the fish for a wonderful supplement - pancakes.
Now you need to make a dough for the pancakes themselves. Rub for this sugar and salt in a bowl with eggs, add a small amount of baking powder and pre-sifted wheat flour. Pour vegetable oil and milk into the mixture. Mix everything thoroughly and whisk with whisk.
Spread the frying pan and, while holding it at an angle, pour a small amount of dough. Turn the frying pan in different directions so that the dough is distributed throughout the bottom. Turn the pancake over to the other side and cook for another minute.
Brush, finely chop and fry in onion butter. Boil the hard-boiled egg. Pass the meat of the chicken through the meat grinder, mix it with half the onions and eggs. Cut the pieces of pike-perch with a fork, add the egg and the onions that are left. Mix everything. Now you know that pike-perch is not so easy to prepare, and the main thing is that you can make from it not only a banal ear.
