How to make wine at home

In the conditions of too rich harvest and limited space of the cellar for storing the blanks for the winter (jam, jams, juices), every autumn an unchanging question arises before the orchard - and what else would be done to preserve the harvest. In this case, you can use the surpluses of apples or plums to prepare tasty home-made wine, which will have to be used at the festive table, and to treat unexpected guests unexpectedly. How to make wine? That's what we are now and will talk in detail.

It will be helpful for you to know that the wine that you cook with your own hands will be much more useful than what is sold in stores, because the home product is devoid of all kinds of chemical additives, flavorings, ethyl alcohol - the drink will contain only what has grown in your garden.

How to make wine from grapes

You will need grapes of wine varieties (muscat, isabella, cabernet). Separate the berries from the bunch, carefully scrape to remove the rotten and spoiled grapes. Wash the grapes is recommended only if there is dust on it, if it is not there - then leave it, because on the skin of the berries there are bacteria that favor the fermentation process.

Crush the berries with a crush, press or juicer. The juice, which turned out to be poured into an enameled container, using a colander. Leave the liquid for a few days at a temperature of about 28 degrees. When you see that the juice has risen upward, and the cake has settled down to the bottom, folding the gauze into several layers, strain the juice and pour it over 10- or 20-liter bottles. At the same time, fill each vessel only with 2/3.

Bottles clog plastic plugs, in each of which it is necessary to make a hole and insert a long vinyl tube into it. The other end of the tube into the bottle with plain water. This design allows you to leave the wine carbon dioxide and not get into the drink oxygen. Instead of the lid, you can use a medical rubber glove.

Leave the juice bottles to wander for a month at room temperature. After the due time, strain the wine to remove the precipitate. Pour the drink on standard bottles (0.5-1l), plug up the cork and put it in the cellar for 3-4 months. As a result, you get a fine dry homemade wine, whose strength will not be more than 5 degrees.

How to make apple wine

Wash the apples (2 kg) and cut into small pieces. Put the fruit in an enamel pot. Pour in water (2l), add ground cinnamon (one tablespoon) and cook until soft apples. Strain the broth through a strainer and leave to wander at room temperature. At the end of fermentation, strain the wine, add sugar (0.5 kg) and leave for secondary fermentation. Now, twice or thrice a day, stir the drink with a wooden stick. After 14-21 days, when the wine becomes light, strain it to get rid of the sediment, and pour into bottles.

How to make apple dessert wine

From apples and pears separately, with the help of a juicer or press make juice. In the container pour apple juice (10.8 l) and pear juice (1,2l), add sugar (1kg) and a large raisin (200g), cut into pieces. Leave to wander for 2-3 weeks, then pour out the bottles of wine, clog and put in storage in the cellar.

How to make plum wine

Select only ripe plums, but do not wash them (as is the case with grapes). Make plum juice with a press or in a juicer. For each kilogram of juice and sinks should be added water (0.5 liters) and sugar (100g). Mix everything in a container and put it in a warm place to start wandering. After a few days, separate the juice from the cake.

Prepare the leaven from warm water (300ml), unwashed raisins (200g) and sugar (50g). Put the fermentation. After 3-4 days, the leaven will be ready. Now it should be poured into a vessel with a wort and closed on a water seal (cork made of cotton with a flexible tube, the second end of which is lowered into a bottle of water). Remove the bottle with the future wine in a dark and warm place. Regularly check how the fermentation is proceeding, whether the water seal is not sealed. When the wine starts to lighten, and the bubbles cease to stand out, drain the beverage from the sludge with a thin hose. Pour into a new bottle to the neck, plug with a cotton stopper and put in the cellar for 24 hours. After this time, replace the cotton wool with a stopper, which should be filled with paraffin. In a horizontal position, a bottle of wine is kept in the cellar for another month 3, so that the drink is finally ready.

Now that you know how to make wine from grapes, plums and apples, you can continue to experiment, for example, with cherries, pears, currants, gooseberries and other berries. Believe me, it will not be less delicious.
