Dishes from the heart are not very popular in our latitudes. And absolutely undeservedly. The use of offal for health is obvious, and the taste of dishes from the heart is delicious. You can cook shish kebab, goulash, cutlets, frying, casserole. So, let's start choosing a recipe.

Cutlets from a pig heart

Ingredients: pork heart - half a kilo, white cabbage - half a kilo, onion - 2 pcs., French mustard in beans - 2 tbsp.

A little salt, green parsley, garlic and dill, 1 egg.

Breadcrumbs, sesame seeds. Vegetable oil for frying.

We grind the heart, cabbage, onions, garlic in a meat grinder, add finely chopped greens, beaten egg, French mustard - salt and mix in a bowl. Do not add any bread, breadcrumbs and flour in any case! Necessary juiciness will provide cabbage, and special piquancy gives to cutlets the addition of minced grains of French mustard. We form cutlets, dumping them in breadcrumbs mixed with sesame seeds. On the heated frying pan is added sunflower oil, we spread the cutlets and fry. Cutlets ready - enjoy!

Dishes from the heart of beef: goulash

You will need the ingredients: beef heart (half a kilo), frying oil, a tablespoon of tomato puree, a spoonful of flour, a large bulb, black pepper, a laurel leaf. Process the heart to cut into cubes weighing 40 grams, sprinkle with pepper, salt and fry with onions (the onion finely chopped). Add the flour and fry to make a thick sauce. After a couple of minutes, shift the pieces with sauce into a saucepan, add the tomato, pour a glass of hot water and simmer for one and a half hours over low heat. Bay leaf, some mistresses put in a pan with tomato paste, others recommend adding it at the end of cooking.

Heart beef in a beer marinade

Heart prepare as in the previous recipe. Fold the pieces in a saucepan, add salt, sprinkle with ginger powder, mix with chopped onions, pour a glass of beer and lemon juice. After six hours, pick up the marinated pieces in a saucepan, add a couple spoonfuls of oil and a half marinade. Stew under the lid for about an hour, adding a little of the remaining marinade.

Dishes from the heart: shish kebab with lemon sauce

It will take: a heart of veal (polkilo), garlic (2 teeth), red pepper (1 pod), paprika (1 pc.), 3% vinegar (80 grams), medium bulb, marinade oil (150 grams), oil for Sauce (100 grams), half a lemon.

Marinade: pound garlic mixed with vinegar, salt, chopped paprika and chilli, adding vegetable oil. Thick heart to prepare, wash, cut into portions (30-40 grams), leave for a day in the marinade. Bake on the grill on skewers. Serve with sauce.

Lemon sauce: vegetable oil is mixed with lemon juice and finely chopped onion.

Dishes from the heart of the turkey are made more tender, and for cooking they require less time.

Turkey hearts in sour cream sauce

Heart of turkey (polkilo) we will wash, we shall clean, we shall cut on quarters, we shall pepper and we shall roast on vegetable oil of 10 minutes. Let's add it, add dried oregano, chopped onion and crushed garlic clove, pour a glass of hot water and cover it with a lid, put out for 15 minutes. Add 100 grams of sour cream, stir and stew for 10 minutes.

Dishes from the chicken heart: heart chicken under a vegetable coat

It will take: 2 onions, pepper, salt, tomato jar in juice, 2 carrots, vegetable oil and a kilogram of chicken hearts. Prepared hearts cut into halves, fry in oil, salt, pepper. On vegetable oil slightly fry the onions and grated carrots, add salt, add crushed tomatoes in the juice. Stew the sauce for five minutes. In the form put a layer of vegetables on top of the heart and cover them with a vegetable coat on top. In a preheated oven (180 degrees), place the mold for 20 minutes.

Serve dishes from the heart with boiled potatoes, mashed potatoes, buckwheat porridge, pickled vegetables, pickles.
