Dish from childhood - scones on brine

Those who are "lucky" to live in the 90s, remember well the terrible lack of money and the constant lack of products in stores. To feed the family, it was necessary to contrive a lot. It was then that numerous recipes were tested for a variety of flat cakes and homemade pita breads from a minimum of products. Some recipes are well established in our family. One of them is scones on brine.

Having our own country plot, our family tried to procure as much as possible reserves for the winter. We dried the leaves of currants and raspberries, collected medicinal herbs and of course, rolled tomatoes and cucumbers into cans. One room in the apartment was completely filled with a variety of jars and bags. After all, it was very difficult to feed five children at that time.

Launching various remnants in the preparation of dishes, we were able to cook a cake on the brine, because it was so pitiful to pour it out. This batch is very tasty and airy. Such cakes on the brine babies wove for both cheeks, and we used instead of bread. The recipe is not complicated, but the result is excellent.

To prepare the dough, you need a glass of pickle, about a glass of sugar, half a glass of vegetable oil, three glasses of flour and a teaspoon of soda. Mix all the ingredients in a deep container until a soft, homogenous dough is formed. It should easily lag behind the walls of the dishes. Leave the dough for 30 minutes to settle. Grease the baking tray with oil or cover with baking paper. Roll out large or small cakes at will. We take into account that they increase in size during cooking. We puncture each cake several times with a fork and send it to a heated oven. Bake until cooked. We put it in a deep dish and we cover it with a towel. Pancakes on the brine can be served to soup instead of bread or simply to feast on tea.

There is an excellent option for cooking such a dish, but the tortillas are prepared on fat. To make a dough, you need two glasses of corn and wheat flour, one hundred grams of any fat, one and a half teaspoons of salt, one onion, fresh or dried greens of dill and cilantro, a teaspoon of red pepper. In a bowl, mix corn and wheat flour. Take half of the total volume, add water and salt to get a liquid "talker". A piece of fat and onions finely chopped and added to the dough. There we also pour out the herbs, the rest of the flour and pepper. We knead a non-tight, but elastic dough. Leave to insist for half an hour. We divide the whole piece of dough into small balls, from which we form cakes not more than 15 centimeters in diameter and two centimeters in thickness. It is best to bake this dish on the coals, putting a cast-iron frying pan on it with grease. But it is possible and in the oven.

If you have any fermented milk in the refrigerator , then you can cook tortillas on milk. To do this, anything, anything: kefir, yogurt, milk, fermented baked milk or snowball. To make a dough you need to have two glasses of sour milk, a teaspoon of salt, five glasses of flour and a teaspoon of soda. Combining all the ingredients, knead the soft dough. Leave it for one hour to raise. After that, we form not very large balls, from which we roll out the centimeter thickness of the flat cake. We put them on a baking tray, pierce with a fork and bake at medium temperature until completely ready.

You can make cakes according to any recipe. Some will become firmly established in your home, and some will not come to court. It's not scary. To have a simple recipe in your cooking book is necessary. Such cakes have often saved our family when there was no bread or wanted something simple, but tasty. Do not necessarily make bread in the form of flat cakes. A great option - bread sticks or strips, which are eaten no less quickly.
