Do you adore sharp snacks from vegetables? One of the original options for processing, for example, cabbage, is the preparation of a spicy "Pili". The recipe for this dish is given in this article in two versions. Take as a basis one of them and get your own unique dish, adding spices and spices to taste.

The basic principles of salting "Pili." The recipe depends on the products used

The main difference of all possible options for obtaining snacks is the choice of the method of pickling the vegetable mass. The general composition of the dish also affects the taste. How to cook "Piliuska" delicious and simple? Carry out the step-by-step work as follows:

- preparation (cleaning, slicing) of cabbage;

- selection of spices and additional vegetables;

- mixing of the main mass with the seasoning by interlayering;

- preparation of brine;

- marinating cabbage.

The resulting snack can consist of large cabbage pieces or look like a motley salad with a lot of various vegetables. From the presence of these or other products, respectively, the taste also changes. Love more sharply? Then add more fresh hot pepper and ground spices. To get a festive dish, appearance is important. Dream, for example, with burgundy beets, thanks to which the cabbage will acquire an attractive pink-red color.

Korean way of cooking "Pili." The recipe for a three-day salting

This option of pickling cabbage does not include the use of vinegar in the composition. A special piquant taste is obtained through fermentation with a large number of different seasonings. It is best to use small young kochanchiki with a "loose" structure. Release them from the upper leaves and cut off the stalk. Then, with a sharp knife, divide the heads into 4-6 lobular parts. Prepare a weak pickle and place cabbage on it for about a day. After this, "stuff" the softened blanks with a mixture of grated carrots, garlic, chopped peppers and seasonings, shifting it between all the leaves. Cabbage pieces lay in layers in an enameled container and cover with a flat plate or a circle. From above put oppression and place the container in a cool place or in the refrigerator. After fermentation for two days spicy Korean cabbage is ready.

Getting the red "Pili." Recipe with beets

The basic structure of a dish:

- 1 average head of cabbage cabbage;

- 1 small saturated color beet;

3-4 cleaned cloves of garlic;

- Bulgarian sweet pepper;

- several pcs. (To taste) peppercorns.

Brine:

- 1 liter of raw water;

- 2 full st. L. Table salt;

- 1 full art. L. Sand-sugar;

- 2 tbsp. L. Dining room 9% vinegar;

- about 1 faceted glass of any (preferably unrefined "odorous" vegetable oil).

Preparation

This recipe "Pili" with beets can be slightly changed by adding other spices and seasonings. Cut the heads on the large layered squares. Beets grate on a large grater, chop garlic and sweet pepper. Put a portion of the prepared additional vegetable mass on the bottom of the pot or cans, and on top of it cabbage. In this way, make several layers. Fill the snack with a hot marinade and let it cool. After 2-3 hours, lightly salted cabbage is ready!
