Cutlets from salmon

It seems that it can be simpler cutlets? And if you cook them from salmon? It can be said that salmon cutlets are more than just cutlets. They are so good and tasty, that they just do not even want to be served on the table as a simple daily dinner, it always seems that the preparation of such cutlets requires a special occasion, a holiday.

In order to prepare fish patties from salmon, you will need:

600 g of potatoes, half a kilo of salmon fillet, a bunch of parsley, a tablespoon of flour, one egg, one lemon, salt, olive oil, black pepper.

Boil in a little salted water potatoes, peeled and cut into neochen large slices.

Peel the salmon fillets from the skin, remove the bones, salt with salt and olive oil and cook it for a couple of 10 minutes (you can use an electric steamer, if not, take a colander and place it on a pot of boiling water).

Finish the potatoes lightly, and mash in a large bowl with a fork or with a blender in puree. Add the cooled fish to the mashed potatoes and also carefully mash, add egg, flour, chopped parsley, and also to taste pepper and salt. Squeeze a few drops of lemon juice, and also grind a small amount of zest. Stir well.

Next, on the work surface, you need to pour in a little flour and make round small small cutlets from prepared minced meat, regularly pouring them in flour so that the fish mince is not linden to the hands.

To fry cutlets from salmon is required as usual on olive or sunflower refined oil, about 3-4 minutes on each side.

Also, instead of parsley, or in addition to it, minced green fresh basil or some other spicy herb can be added to the taste in a similar way. If you want to experiment a little, cook cutlets from salmon with crab sticks.

You will need: half a kilo of salmon fillet, 200 g of good crab sticks (or crab meat), salt, 2 handfuls of wheat flour, 100 g of buttery butter, pepper, pinch of thyme.

The fillet of salmon needs to be cleaned of skin and bones, cut into not very large pieces. Butter should be cut into cubes. Scroll the fish, crab sticks and oil through a meat grinder. Then minced should be well kneaded hands, salt, add thyme, pepper. Dipping regularly hands in a bowl with water poured into it, to form small cutlets, which must be rolled in flour.

In a frying pan, melt a very small amount of butter, in it, fry the cutlets on both sides until the appearance of golden color. Transfer the fried cutlets from salmon to a paper napkin in order to absorb excess fat, now you can serve!

Oil is preferable to take a cold, as it is easier to pass through a meat grinder, it is not smeared at the interior of the meat grinder. In this recipe, butter is required to bind the whole mass, and also to make the cutlets more tender in taste.

If desired, one egg can be hammered into the stuffing, but then the whole mass can become more liquid, and the cutlets will be difficult to form, they will become more flat and will look less beautiful. If, after all, add the egg, then sift 2 tablespoons of flour into the fish mince in order to restore the former consistency to the stuffing.

You can also rub lemon zest for flavoring.

Crab mince and white fish are not combined together. Crab sticks in these cutlets help create an original texture, gives an interesting color to salmon cutlets, and the thyme will give the dish a delicate, exquisite aroma of nobility.

If the salmon seems to you too expensive fish, then cook the cutlets from herring. The simplest cutlets from herring can be cooked quickly and simply, but they turn out tasty and not burdensome for the family budget.

You will need: a kilogram of herring, 150 g of potatoes, onion, 10 grams of garlic, 10 grams of salt, a pinch of pepper, 100 ml of vegetable oil, one egg, breadcrumbs.

Herring can be taken, both fresh and freshly frozen. It must be cleaned of scales, cut off the head, fins, tail, gutted. Further in running water, it is necessary to thoroughly wash the pieces of herring, caviar and milk. Potatoes, garlic and onions cut into small pieces. Mix everything together with fish, salt, pepper.

Then everything must be scrolled through the meat grinder once or twice. In the finished minced meat, the egg should be hammered and mixed well. From minced meat to form cutlets and well to roll them in breadcrumbs. Then fry them in a frying pan in vegetable oil over medium heat for 4 minutes on both sides.
