Vareniki with meat: a recipe for cooking

Tasty and satisfying dough products that disappear from the table in an instant ... What are we talking about? Of course about dumplings! This is the oldest dish that came to us from Turkey. Many believe that it is a national treat of Ukrainian cuisine, but it is due to the Turks that it originated.

It is not so important, however, who is its creator, most importantly, that it is spread in the territory of Russia. True, modern housewives do not trouble themselves with modeling and prefer to buy factory products. Of course, on the shelves of shops before the eyes of the consumer is a rich selection of vareniki with a variety of fillers.

Unfortunately, it's hard to talk about the quality and freshness of such a treat. Domestic vareniki with meat, potatoes, cheese and other ingredients, of course, beyond any competition. And the time spent on modeling will more than pay for the delicate taste of the dish. It ideally fits as a healthy breakfast, a hearty meal and a light dinner. Everything depends on the filler and the sauce with which you serve. Today we have prepared an interesting selection of recipes from meat with the addition of various products.

How to cook dumplings with beef meat?

In the classic recipe as a filler is taken loin beef and a lot of onions for juiciness. To taste the dish resembles a mantle, only the size and shape are slightly different. The dough should be thinly rolled up, without lumps. To speed up the time of modeling, involve close people. So, let's talk about how to prepare vareniki with meat. The recipe is simple in execution, you will see it now. Necessary set of products for filling:

  • A kilogram of beef boiled;
  • 500 g of onions;
  • Garlic head;
  • Dill and parsley;
  • Salt, black pepper.

Components for the test:

  • two eggs;
  • Warm filtered water - 1 glass;
  • 50 ml of sunflower oil;
  • Flour - 500 grams;
  • Salt, a dessert spoon of granulated sugar.

Walkthrough

First we will prepare forcemeat: finely chop the onion, passer on the butter until ruddy. We skip pre-boiled beef through a meat grinder along with garlic. To the meat mass we send roasted onions, chopped greens, spices. Cover the food film and proceed to kneading the dough.

In a deep bowl we beat eggs, pour in water, add sugar, salt. Through a sieve we pour in the flour, until the mass becomes homogeneous and elastic. The main thing is not to overdo it with flour, otherwise the dough will become tough. In the end, pour the sunflower oil. Thoroughly mix. Let's brew for 10 minutes under a towel, preferably in a warm place.

A wide board along with the rolling pin is sprinkled with flour, we roll out the dough with a thin layer and cut out the mugs with the help of a glass. You can do a little differently - to form from the dough sausage, cut into small pieces, then roll out. We lay out on each circle a small amount of minced meat, tightly fasten so that the filling does not fall out during the cooking process.

It remains to boil vareniki with meat in water about 5-7 minutes after boiling. When serving a dish on the table, be sure to put a piece of butter. Usually the product is dipped in sour cream or cream sauce. Homemade treats can be made with any products, depending on taste preferences.

Homemade dumplings with meat and cabbage

In Soviet canteens often served a similar dish, fried in breadcrumbs. In boiled form, it is not worse, and it is prepared identical to the previous one. By the way, the product is somewhat reminiscent of Baltic patties with smoked pork. We will not weary you for a long time, let's get to work. We need the following ingredients:

  • Pork in the amount of three hundred grams;
  • Fat - 50 g;
  • White cabbage - 200 g;
  • Onions - 3 small heads;
  • Black ground pepper, garlic salt.

For the test:

  • Sunflower oil - 30 ml;
  • A glass of water;
  • Flour - 200 g;
  • salt.

Instructions

We sift the flour, make a small indentation in the middle, pour in water. Separately we beat the egg, mix it with salt, combine it with flour mixture, pour in the butter and mix it well. To facilitate this process, grease your hands with vegetable oil. Cover with a towel and leave for 10 minutes.

In the meantime, we will fill. Cut the onion into small cubes, lightly fry. Cut the cabbage into thin strips and add to the onion. A little bit. Stew until softened cabbage. Through the meat grinder let's pass the pork with bacon, combine it with the vegetable mass. The filling for dumplings with meat should not decay.

If the stuffing turns out too dry, then beat the egg, it will hold the mixture together. It remains thin to roll out the dough, cut into mugs, fill with filling and boil. If desired, the recipe can be interpreted.

With chicken and potatoes

The next dish is airy and tender, because it contains mashed potatoes. And chicken meat in combination with root vegetables give an amazing result. Connect the whole family and sculpt vareniki with meat and potatoes in reserve. Required components:

  • Half a kilogram of chicken fillet;
  • Three hundred grams of potatoes;
  • Butter - 50 g;
  • Three onion heads of any kind;
  • two eggs;
  • Two glasses of flour;
  • Spices to taste;
  • 150 ml of water.

Technological process

Water for a while put in the freezer. Take care that it does not turn into ice. Remove the oil in advance from the refrigerator. Sifted flour mixed with eggs, softened butter. Chilled water with a thin trickle pour into the container, constantly mixing. As a result, you get an elastic dough, which must be left under the towel for a few minutes.

Let's pass onion with seasonings. We boil the potatoes in a uniform until they are ready, peeled and kneaded with a fork. Add ½ of the fried onions and salt. Chicken fillet grind, combine with all the ingredients. For brightness, you can chop the greens. We form a mug from a "rested" test, filled with minced meat.

Boil in slightly salted water for about 7-10 minutes. Pour the dish with sauce, for the preparation of which you want to mix sour cream with fried onions, black pepper and grinded nutmeg. Top with crushed coriander or dill.

With stuffing from pork forcemeat and sauerkraut

It is not less tasty to prepare a dish of salted cabbage, finely chopping it. The sour taste of the vegetable gives the food a piquancy and originality. So, the resourceful housewives, who are accustomed to preparing for the future, will not exactly leave the family hungry. The principle of preparation is identical to the previous recipes, nothing particularly complicated here. Such products should be prepared:

  • Pork-ground beef or meat in the amount of 400 grams;
  • Sauerkraut - 250 g;
  • Two heads of onions;
  • Three cloves of garlic;
  • Black pepper, salt.

Ingredients for the test for 500 grams of flour:

  • Two chicken eggs;
  • 180 ml of warm water, preferably filtered;
  • a pinch of salt;
  • Vegetable oil - 30-50 ml.

Cooking process

Before you start to make dumplings with meat, you need to chop the onion, and the more it is, the juicier the filling will be. In the ground minced meat we add favorite spices with onions, we also squeeze garlic.

Cut cabbage finely, pierce under the lid for at least an hour, so that all the liquid and salt evaporate. Then connect both masses and leave "rest".

In the beaten eggs we sift the flour to make an air dough. Mixing, in small portions, pour in ice water and oil. After kneading the dough, let him brew a little. Roll out a thin circle, cut out the mugs, using a glass. In each circle we put stuffing, fasten the edges. In boiling water we throw flour products and cook for 7-10 minutes.

Cooking for a couple

Love to eat delicious, without harming the figure and health? Then we suggest cooking dumplings with steamed meat. The formula implies the presence of chicken or turkey minced meat, which is characterized by a low fat content. Ingredients for the dough:

  • One and a half cups of fresh yogurt;
  • two eggs;
  • 2.5 cups of flour;
  • Hydrated soda - dessert spoon;
  • salt.

For filling:

  • Chicken fillet - 400 g;
  • Three onion heads;
  • Garlic in the number of two lobules;
  • Dill, coriander;
  • spice.
