Traditional Russian dishes

Russian cuisine is known all over the world. Unlike other national cuisines, Russian dishes absorbed the traditions of many peoples living in the vast territory of the former Soviet Union. Therefore, Russian dishes are famous for their variety of culinary recipes.

Since ancient times, cooking has not been used such heat treatment as frying, which appeared relatively recently. The products were prepared not on an open fire, but in an oven. In its majority, traditional Russian dishes languished, stewed or cooked.

Foreigners, when they come to Russia, consider it as a rule to try the originally Russian dishes: pancakes, kalachi and caviar.

Russia is a Christian country, which undoubtedly influenced the recipe of many dishes. After all, it's far from a secret that a large number of days in a year are considered lean. Hence the Russian table was divided into lean and fast. This, in turn, has made popular dishes in Russian culinary from fish, mushrooms, vegetables and berries.

No less tasty are Russian soups. The famous borsch, the recipes of which are about fifty, the cabbage soup, characteristic for the central strip of Russia, rassolnik, okroshka, ear.

Kasha - another favorite dish, without which you can not do in the Russian cuisine. It was prepared from millet, buckwheat, wheat, oats and other cereals, which were used both in the whole form and in crushed stone.

In everyday life for baking bread was used mainly rye flour, and only on holidays it was allowed to bake kalachi, pies from white wheat flour. For the filling used meat, fish, cottage cheese or jam. None of the festivities could not do without the Russian loaf, because this was how deep respect was expressed to the most dear guests.

Another characteristic feature of the Russian cuisine is the harvesting of vegetables for the winter with the help of souring, pissing or pickling.

Russian dishes and desserts were not bypassed. The berries were brewed in honey, baked in the oven, and traditional jam was prepared from them. Favorite drinks are kvass, mors, sbiten, mead.

In Russia, so-called ritual Russian dishes, which were prepared on certain days of the year, are of great importance. To them you can include pancakes, Easter cakes, kutju. So, pancakes were always served at the table during the Shrovetide week. They were personified with the sun, which was supposed to melt and drive away the winter cold. Kutia was preparing for Christmas, Epiphany, and was also traditionally considered a funeral dish in funeral days or a funeral home for deceased relatives. Cakes were cooked on the eve of the Great Easter. There was a belief: what kind of cakes will turn out, this will be the whole next year.

Much attention in the Russian cuisine was given to the taste qualities of ready meals, so a lot of spices were used. This cumin, onion, horseradish, mint, garlic, pepper, parsley, dill, thyme.

Surprisingly, most Russian dishes have a curative effect. So, sauerkraut strengthens immunity, hot soups allow you to warm up after the winter cold, baked dishes have a beneficial effect on the stomach and liver, popular sour-milk products make the bowels work well.

Modern Russian cuisine preserved its ancient culinary art in many respects, but at the same time brought a lot of new or borrowed in the good old traditions. That is why today Russian dishes are considered one of the most delicious all over the world.
